Midweek Happenings

Happy Wednesday everyone. 
It was a very hectic but good day at work today. The time flies by when you are really good and busy.
After work I started chopping and cleaning vegetables for supper. I have some eggs in a pan that I will make devilled eggs with-my husband loves them.
On Wednesdays we are often turning to a cold plate for supper. We are each having freshly sliced deli meats and cheeses and yummy vegetables. He will have some red beets on the side. We will both enjoy a handful of potato chips and some garlic dill pickle quarters to go along with it.
That is a light, but very filling supper. It is such a nice change of pace from cooking even though I did have to do the eggs for him.

It sounds like you had a good meal for for dinner. I had a nice taco soup my stepmom made and sent home with me. I had a doctor appointment today, but rescheduled. Tomorrow, I see my primary care. I’m going to have to summon a great amount of tolerance to deal with her.

We took the mother-in-law out of the Alzheimer's facility and to lunch and had a good visit.

It's nice to have an occasional rest from cooking. Your supper sounds ideal.
