A pleasing dessert.

I’m not crazy about desserts, certainly not in restaurants, but it’s grey to have a light palate cleanser to follow on with after a heavy, meaty meal.
So while I roasted the lamb for yesterday’s dinner my wife produced the excellent Easter cheesecake pictured above.
The biscuity, crumbly base was packed into half a large Easter egg. It obviously was one of those bases that doesn’t get cooked in the oven.
After sitting in the fridge for a while. The creamy mixture (ricotta, mascarpone and I don’t know what else) was spooned on top of the base and the whole thing was further chilled before serving.
Very pleasing.
