Stuffed shrooms.

Dinner this evening, as I informed @looeyville earlier, was stuffed mushrooms, and though self praise is faint praise indeed, I performed better than usual. My wife concurred.
The mushrooms were those great big portobellos with plenty of capacity to carry the stuffing.
The stuffing was in two layers, first a mixture of ricotta, nutmeg, spinach and lemon zest. Then atop that lay breadcrumbs lightly fried in garlic butter and nicely seasoned with Parmesan. And chopped parsley. Grated Gruyère sprinkled on it before serving.
Into the oven they went - the picture is of them before cooking.
They were a very satisfactory delight though I say so myself and shall be repeated in variant forms on a regular basis.

I have not stuffed mushrooms in ages, but I do love them stuffed; I used to use crab meat.

Mushrooms are so good and hearty too for a full and tasty meal. Sometimes i stuff them with seafood or even mild sausage and some minced vegetables.

@xFiacre There's something about the texture that I don't like. And they don't appear to have any taste except for whatever sauce you use or other ingredients you combine with them.

Those sound delicious. Vince isn't keen on cheese so I'm not sure what he'd put in ours.
