Cucumber and onion sandwiches ……a taste of my childhood.

Reading my posts you will be forgiven for thinking that I am obsessed with onions !
I have talked a couple of times about the cheese and onion combination which is very common and popular here in the UK.
Today I am going to be singing the praises of another well loved British combination …..
Cucumber and onion
This is something that peoples Nans used to make ….then our Mothers ….now my generation .
Simply slice a Spanish onion and a cucumber, layer them in a dish and cover with vinegar.
Leave at least overnight.
Brilliant on a sandwich
With cheese on a sandwich
On a plate with a salad or buffet
It is the easiest thing to make and quite cheap too.
Once you have started using it just keep topping it up with more sliced onion and cucumber…..
Delicious.

Mom used to eat stuff you're describing but none of us kids wanted anything to do with those tastes. The ONLY time I eat vinegar with anything is when Pretty is craving cooked spinach. I'll join her in a bowl of that. (I usually eat spinach raw on a sandwich in place of lettuce, which I really don't like.)
Did you know squirrels won't eat spinach? I can grow all I like in the planter on the front porch and the squirrels won't touch it. But they sure eat the crap out of the lettuce I plant for Pretty. 
I have to keep screen wire over the top of the lettuce planter or the squirrels will eat every bit I grow and Pretty doesn't get any. 
One little fat squirrel keep checking the planters on the front porch to see if I've started growing "his" lettuce and seems to give me dirty looks when I haven't planted any yet.

@DaddyEvil ….i didn’t know that squirrels won’t eat spinach ! It’s a fun fact I will try and remember …..
I think cucumber and onion is an old thing to be eating ….i don’t think it would impress today’s youngsters ….never mind …their loss !

@Traceyjayne It's more fun because it's an observation from somebody you know instead of something you read about online.

@DaddyEvil I will use that fact whenever I can …..
I will enjoy it forever ….it really is delicious ….todays folks eat smashed avocado or smoked tofu ….lucky them !

Hubby and I couldn't handle raw onions. And I would cook with them in a very limited way.
