Last night I made a really excellent low carb Reuben casserole. It is right up there with the most delicious things I have ever made. I liked it so much I want to find a site to post it on. I should get a byline. I did adapt the original recipe a bit, for instance it called for relish and white vinegar. I just used chopped dills and a bit a bit of the juice. I love dill anyway..so the more the better as far as I am concerned. It was a bit pricey to make due to all the deli meat, but I may try it with canned corn beef next time to make it a bit more affordable. Did you ever post a recipe on a site?

You need dill in it, and minced onion. At least the one I made. It also called for a tsp of sugar..Some recipes call for caraway seeds and some don't. I would have put some in but I didn't want to hunt through the spice cabinet for it.

@LadyDuck That's what I mean. There is a lot of variation in the recipes..like with most.

@snowy22315 - There was no dill and minced onion in the recipe I had, but I am sure there are plenty of recipes. Some use mayo and also tomato paste, but I am sure it's better without tomato paste.

I only ever shared recipes here. I do make a Reuben Casserole. I love that it uses only a little rye bread. It is less expensive than making a bunch of Reuben sandwiches. My recipe has Thousand Island plus some mustard, and either chopped dill pickles or dill relish. I will try that with the pickle juice, it sounds good.

Sounds delicious, although I never heard of it. I went to a deli last Saturday with my older son’s MIL for lunch and had corned beef sandwiches. She was going to have the Reuben, but switched.
Years ago I posted a recipe on Paul Newman’s website for my green bean recipe that I made up. I actually won 3rd prize.
