I wanted to make a cake using some of the plums we have in the freezer. My favourite recipe is a plum, hazel nut and chocolate cake but it makes quite a big cake so I thought it would be a good thing to do when we have visitors. Last week my partner randomly bumped into an old friend he hasn’t seen for years and he invited her for dinner this evening. So it seemed like a good opportunity to make the cake today. I got the recipe out of my folder, put the plums in the fridge to defrost and checked that we had the ingredients; we had everything except enough nuts, so when I was out today I bought a bag. Then once I was home I weighed out the flour, sugar and butter and started mixing. I had creamed those together and went to get the eggs when I found we only had two left and I needed three. I knew we had enough last time I looked, so I went to ask my partner. Turned out he had completely forgotten about the cake-making, even though he asked me earlier whether I had defrosted the plums, and the recipe was on the kitchen counter. He knew we were due a regular delivery of 30 eggs tomorrow morning so he thought it would be fine if he ate a couple of boiled eggs for lunch, and so as to be energy-efficient he boiled a couple extra as well for tomorrow. I was not impressed. I didn’t really want to have to go to the shop, and I didn’t want to buy a box of six because then we’d have five spare, plus another 30 tomorrow, and we’re going to be away quite a lot of next week! Luckily in the end a friend was able to come to my rescue with a spare egg. I will return it with a slice of cake tomorrow! All rights reserved. © Text and image copyright Fleur 2026.

I am glad a friend could help with a spare egg. You could have used 1/4 cup of applesauce to substitute the missing egg or 1/4 cup of yogurt. As you had 2, it would have worked.

I don't have any apple sauce either, we ate all that. Another time I will try yogurt though, thanks for the suggestion!

Well I would have added a suppy milk and butter to the two eggs I had But I can't bake Maybe that's why lol My plums, nah, never mind

Most of the time here it's chocolate that disappears. I always have to double check that he hasn't eaten what I was counting on for some recipe!

It's good that you have good friends that can help you out. The cake sounds yummy .....if its too big for you and you need help ...you can always send me a slice ....
