Aam Sandesh a lovely summer sweet from Bengal

Aam in Bengali means mango and sandesh is a sweet made from cottage cheese. In Bengal sweets are invariably made from cottage cheese.
My garden produced a lot of ripe mango this summer. I am still harvesting them keeping some for myself and distributing the rest among the people I know.
I there thought of making this sweet from mango pulp. Apart from ripe mango, cottage cheese and sugar, I added some powdered fox seeds and cashew and some cardamom powder.I sprinkled some crushed pistachios on the top.
This sweet from Bengal is really delicious.

I bet it is good. I love mango. I have never heard of fox seeds. what do they taste like?

Fox seeds are abundant in India. They are white and round and in very light. It is actually tasteless but tastes lovely when fried in oil or clarified butter, sprinkled with salt and pepper.

That sounds absolutely delicious! Homemade sweets are always special, and using fresh mangoes from your own garden must make them taste even better. I like the idea of combining the sweet mango pulp with cottage cheese, and the addition of fox seeds, cashews, cardamom, and pistachios must give it a wonderful flavor and texture.

My garden's mangoes are very sweet so I didn't have to add much sugar. The sweet had both good flavour and taste.

Mango is cheap in India but fruits like strawberry, pears and some imported fruits are quite costly in my city.

@aninditasen Just Like in my home country Philippines. Here in Germany, mango and other tropical fruits are expensive whereas strawberries, wild berries, cherries and other fruits that grow here are cheap.

I have enjoyed Sandesh, but never tried Aam Sandesh. One of my friend is married in Kolkata. This time I'll ask him to bring this sweet for me whenever he goes.
