Why do they always close early?

These days almost all visitor attractions have a gift shop and a café. Obviously a great money-making opportunity and no doubt appreciated by many visitors. But without exception in my experience, the café always closes half an hour to an hour before everything else.
Why do they do that?
You’ve spent hours walking around a garden or looking at exhibits in a museum, if there’s a lot to see you don’t want to take a break before closing time because then you would miss some of what you came for. But at the end, with a bad case of ‘museum feet’ you are just ready for a sit down and a nice cup of something, and there’s nothing available.
Sometimes the gift shop stays open for another half hour after the main place closes, but I don’t need any ‘stuff’. I would really appreciate a comfy chair and a coffee though.
I wish they wouldn’t do that!

They do that because the people running the café still have to clean up, wash dishes and then can go home when the people running the rest of the exhibits/garden are ready to go home. After all, those people started working and opening the café when the main exhibits/garden opened for customers. They're tired and ready to go home, too.
You MIGHT be able to talk a couple of the people running the café into staying for your lazy butt, but I'd bet you'd be paying their hourly wages plus overtime for them to stay for you. I KNOW from experience I'd ask for enough that you won't want to stay like that a second time. When I worked at Pizza Hut, some customers asked if they could stay after closing. The manager didn't ask how long they wanted to stay and didn't charge them extra. He still had to pay the two workers for the extra three hours and we were letting him know we weren't happy, even getting overtime. He never did that again!

I agree with you.
If they opened half and hour earlier and remained open half an hour later, that would bode much better with the guests.
Little things like that make a lasting impression on visitors.
We have arrived at museums early and only had the opportunity to sit outside because some gift shops are not open yet either.

We walk straight through the shops & refuse ti buy overpriced tat. Like you though it would be nice to stop in the cafe for a drink & a breather though.
