What are your favorite cool meals?

Going beyond salads and sandwiches..What are your favorites when it comes to cool meals? I like to make a pasta salad and put all kinds of meat, veggie and cheese scraps in it. I am also thinking of making a cold cucumber soup..very good, helps beat the heat

We have a couple of favorites, but I wouldn't consider them meals. More like snacks or sides. But Serbian salad, potato salad, coleslaw, tuna salad, seafood salad... There are a number of things.

@snowy22315 Nothing fancy. Just diced multi-colored bell peppers mixed with red onion and tomatoes, tossed with garlic salt, pepper, vinegar and olive oil.

Cold roast beef salad, the Italian "vitello tonnato", tomatoes and mozzarella, a gazpacho soup, cured meats with marinated vegetables, avocado ans shrimps salad, canned tuna salad, feta Greek salad. So many.

I like a Greek salad too. That reminds me I was going to get some more Greek salad dressing. I have everything here to make one.

I just made an imitation crab salad, and it was very tasty. I love it on a hot, sunny day.

The cold soup sounds interesting and pretty satisfying. We keep the a/c on for 6 months of the year, so while we are here at home, our menu doesn't change alot, although we do enjoy more salads and fresh fruits.

There was one crunchy snack I used to make..I can't remember the name now. It's very delicious
