Sunday Supper

I have a sirloin tip roast in the oven. It has been in there, cooking nice and slow for a few hours already, and it is just at the point where it smells scumpicious. I checked it and it still has a ways to go, but it is nowhere even close to supper time.
This is the last of the larger roasts that came with this quarter of beef. We prefer smaller 3 pound roasts since it is just the two of us. Sure, he likes leftovers, but I prefer the smaller roasts of about a pound less.
He asked specifically for a roast for Sunday supper earlier today.
I have some delicious Yukon gold potatoes, which make really good mashed potatoes, we'll have those, a steamed vegetable yet to be determined and some gravy.
Since it is a holiday tomorrow, and the stores will all be closed, I may take a walk after a while to the Italian deli/bakery and see what they have reduced as day old, since they will not be able to sell them that way tomorrow.

Well, just like ti always happens with me I try to expand my menue but it just is not mom's cooking, Shake and baked a nice boneless thin pork chop and even though it was tender to eat it was dry and I did not like it, Freezing the rest of the chops and then deciding what to do with them,

@Juliaacv I don't bother making any special meals for myself. My mom knew how to make juicy pork chops; I will just freeze the rest until I can figure it out.

I was thinking quiche, but I have a pizza I have to consume or store so I think I will have that tonight. I really have nowhere to store it.

We haven't had baked chicken in a while, that was what I originally thought of for supper tonight, until my hubs suggested a roast and then went to the deep freezer and took it out.
While I was peeling the potatoes, I had to stop before I normally would, remembering that he will not be bringing the leftover potatoes to Harper and Willow tomorrow. I'm trying to make enough just for the 2 of us and maybe 1 leftover portion for him, it will take me some time to get used to that.
