Giving my son a cooking challenge

Lately, I've seen posts about a challenge some parents are giving their teenagers when it comes to cooking, and I thought it was a great idea. You give them a budget and have them feed a certain number of people with the amount of money you give them.
I have decided to do this with my son. The goal is for him to learn how to responsibly shop to feed three people, one of whom is diabetic, so that adds an extra challenge. He has to come up with a dinner he can cook by himself that will feed our family for whatever budget we give him. I'm still deciding what the budget will be. My husband being diabetic automatically makes it cost more, because he can't just make regular burgers with regular buns. My husband has to have special bread. My husband is limited in what vegetables he can have because things like potatoes, corn, and peas are very starchy. My son has to completely think about what my husband can have and what things cost. I might have to give him a bit more of a budget than I normally would due to my husband's dietary restrictions. My son can still fairly easily find a meal to feed the three of us that isn't outrageous, but he needs to really think about what he knows he can cook and what he can afford to spend. We will allow him to use some of what we already have at home. It will be interesting to see what he can come up with. I love that this gives him a fun challenge while also teaching him important skills.

It's a good idea.
On many levels
Being able to plan a meal, budget, procure and then prepare and cook it all properly ate skills he will need one day.
