Awesome Chicken recipe

I found this recipe when I was looking for something to make with the chicken I had thawed and other ingredients I had on hand. http://allrecipes.com/Recipe/Quick-And-Easy-Mexican-Chicken/Detail.aspx Quick And Easy Mexican Chicken SUBMITTED BY: Karen Taylor "A one-dish low fat chicken entree with Mexican flair, taking less than 30 minutes to prepare!" INGREDIENTS * 4 skinless, boneless chicken breasts * 1 cup salsa * 1 cup shredded Cheddar cheese * 1 clove garlic, minced * 1 pinch salt * 1 pinch ground black pepper * 1 pinch ground cumin (I left this out) DIRECTIONS 1. Preheat oven to 375 degrees F (190 degrees C). 2. Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin to taste and add to hot skillet. Cook until brown on both sides and no longer pink (10 to 15 minutes). 3. Transfer meat to 9 x 13 inch baking dish or casserole dish, top with salsa and cheese and bake at 375 degrees F (190 degrees C) for 15 to 20 minutes (until cheese is bubbly and starts to brown.) Serve over rice or buttered noodles. (I chose rice) It was a big hit at my house!

What type of salsa do you use? Any brand in particular? or you just make it on your own? If so how? I'd like to try this, it sounds tempting. =)

Oh so any would do. Thanks I'd like to try it. Any kind of cheese would do to? or do you prefer the ones that melt quicker?

I used the mexican shredded cheddar that I had left from tacos. I think any shred will do.

That sound yummy. I'll have to try it sometime. I love making new dishes for the family. And we eat lots of chicken.
