shiny or dull side of aluminium foil?

Singapore

I'm sure most of us have a roll of aluminium foil in our kitchens. it's great for lining baking trays - stops stuff from sticking to the tray and making cleaning a real nightmare. so my question today is, do you use the shiny or dull side of aluminium foil? is the shiny or dull side of aluminium foil facing upwards in contact with your food? I've heard theories of either side, but have just used the shiny side lately. what is your practice?

I was told of a trick about aluminium foil which is to put the shiny side down on the pan and your food won't stick. I found that to be true and have been doing that ever since. I don't cook that often but when I do, it's shiny side down.

If you place the dull side of foil directly on hot food and take it off when ready to eat the foil apperance will change. That is because of the chemical reaction from the heat and the chemicals[poison]have found their way on the food.If using foil for hot meals first use cling wrap or deli paper then foil.I use the shiny side but doesn't really use that much foil now.I don't think it is a problem over cold meals.

I never really put much thought into it actually. I usually use the shiny side to wrap the food. This is cos this side, applied with a little butter, is less sticky than the dull side. Also, with the dull side on the outside, it traps heat better and will be able to cook the food better as well. Does it really matter which side you use to come in contact with the food? What are the theories you heard of? Can share with me so that I will know a little better the next time I use foil?

yeah... i never really realized how far behind i am in this thread till i posted my post. Some of the other posts before mine gave a little better explanation that what I did in my post. I guess it does matter to some extend. Cos I remember there was one time when we were using foil to cook the sweet potatoes during one of the BBQ outing. Those wrapped with shiny side out took a much longer time to cook compared to those that had the dull side out. heh heh... the little things in life that makes the difference, yet we dun really notice them.

read some of the responses, quite amazing! apparently shiny side up when lining tray and dull side facing exterior when wrapping to store food in fridge.

HellO! Aluminum foil typically has a dull and a shiny side, which occurs during the manufacturing of the material. Typically, neither side is significantly better than the other for the general purposes of cooking, wrapping, covering, or lining processes when preparing or storing foods. However, since there is a dull and a shiny side, and since the shiny side is a better reflector of heat or cold, it may be of some value to use each side accordingly when cooking or storing foods. It is simply that the difference in value is very small and probably not noticeable. That said, since the shiny side of foil will reflect heat better, wrap foods to be stored in refrigerated conditions with the shiny side out so warmer temperatures are reflected away kept out of the warpped food. Similarly, if an item is being cooked, it may slow some of the cooking process only slightly if the shiny side is on the outside of the item resulting in the heat being reflected. Or if you want wrapped food to remain warm, wrap the food with the dull side out so the heat reflects off the shiny side and back into the food. cheers! :D

that's very informative! most people think there's a difference to which side is better though.

It depends on what I am cooking. If I am baking something, I will usually use it with the dull side facing the food. If I am covering something that is cooking, I will use it with the shiny side facing the food.

i think i usually use it to line trays with the shiny side up, i.e. touching the brownie mix.

The right way to use aluminium foil is to have the dull side on the inside and the shiny side outside.. The dull side of the foil has more heating effect than the shiny one, and that's the only way to use it... Hope u change ur practise soon... If u use shiny side inside, vapors will start accumulating on the surface of the foil, and that's wrong, it can get ur food wet... But that dosen't happen with the rough or the dull side...

thanks! the answers from all these posts are shiny side in when wrapping, and shiny side out when lining trays.

I have never really had any reason other than my mother did it and that is how I was taught to use the shiny side up when cooking and when covering foods.

Hi. Tin Foil is great for baking... I mainly use tin foil for meat loafs and roasting, if Ive run out of oven bags... I choose to use the dull side for the food, and the shiny side facing the downward in the dish...

I read this and heard in some trivias and facts.. both side of aluminum foil is no problem to use. but for me its much beeter to use the dull side, because it looks clean and neat if the shiny part is visible..

When using foil to line a baking tray or dish, I usually place the food on the shiny side. However, when covering food with foil, I normally have the shiny side facing up. I think that this is simply because of how it is when I tear it off the roll.

seems like most of us don't give a second thought to this! kinda comes naturally.

It is my understanding that the shiny side reflects the heat. Therefore it is the shiny side which goes food side. If covering a tray of roast, for example, it would be shiny side down. If layering a tray to place things on, it would be shiny side up.

I don't really remember because I only use aluminium foil during BBQ and I have not been to one for a long time. If I am not wrong, the shiny side outside tend to get burnt more easily than the dull side out. So I have the shiny side in contact with the food.

I rarely use it to cook with but I wrap food in it with the dull side facing food and I even wrap gifts for my kids in it, shiny side up. If I bake with it, it would be shiny side down but I have no reason for that. Just a weird preference I guess.
