Buttermilk? Bluberry? Pumpkin? How do you make them? From scratch? Bisquick?

I cheat on pancakes and use a mix. I buy the Hungry Jack Buttermilk pancake mix. My sister started making them for my son with ground Flax seed in them and he loves them that way, so I have made them that way for him ever since. He likes his with butter and no syrup. I do not eat pancakes very often, but when I do eat them it is the same way my son does.

I'll probably be the minority here, but I do not like pancakes. Something about them just doesn't taste right. I actually think I don't like them much because of the texture of the pancake after it is cooked. That and I cannot eating syrup on them. Too much syrup makes me gag. And I can't stand eating pancakes without anything on them either. So it's pretty much a lose/lose situation.

I love pancakes but usaully I won't make them myself. If I would make them I used bisquick. I like buttermilk and I prefer chocolate.

What makes pancakes taste best for me is having my daughter devour them. I don't really make pancakes from scratch. A box mix or bisquick usually is my starting point. But, I don't think that's far removed from 'from scratch' as these pancake and biscuit mixes are just flour with some baking soda or baking powder already mixed in. Hrm, I seem to recall that buttermilk and regular milk change the requirement from baking soda to backing powder or something like that. I think buttermilk mixes require baking soda because they are more acidic. I guess that means making pancakes from scratch could get all messed up if you used the wrong leavening type agent given the acidity of your batter.

I do love pancakes...blueberry is yummy, sometimes I add oats, banana, and/or cinnamon. I've never tried pumpkin in the batter. I always make them from scratch...it's cheaper and healthier.

I love homemade buttermilk pancakes and if you toss in a few bluebrerries I won't protest. Also they are very good with a banana sliced on top with the maple syrup. Yummy!
