What are your favorite fresh summer recipes?

One of my favorite things to fix during the summer is roasted fresh veggies. I like to cut up fresh carrots, potatoes, onions, bell peppers, squash, leeks, parsnips, and what ever else I have on hand. I then mix them together and either make an Italian dressing or use bottled salad dressing (fresh really is better though) to toss them in and then roast them either in the oven or on the grill. I will usually grill some sort of meat to go with them and either a pasta salad, or some other sort of cold dish. What are some of your favorite summer recipes using fresh veggies?

One of my favorite things to cook is a mixture of okra, squash, green tomatoes, cucumbers, and onion. Pour beaten eggs over it and roll in seasoned corn meal and fry in a small amount of oil until lightly browned and soft.

Yes, is is good that way, too. Especially the green tomatoes!

mine was different. its too hot here in the philippines during summer days thats why i like eating more of cold food. especially fruits like watermelon and mango. i like halo-halo too. and ice cream as well.

My favorite thing in the summer is to make a fruit salad. I really like to do chunks of different melons and toss in some grapes. Strawberries, grapes, apples, orange sections, and banana with a little orange juice squeezed on top is really good too.

That sounds like something our whole family would like - and be able to eat. My mom is diabetic so I have to watch using sugar in cooking, but she can eat fruits and juices and our kids love fresh fruit. I had not thought about putting orange juice over the fruit, though. That sounds good, I will have to try it!

I love this one dish from Panera bread Company. It is called a Tomato,Mozzerella salad. They use fresh tomatoes. Red onions, and soft mozzerella cheese round it out. It is really delicious. That with a small bowl of french onion soup makes a perfect meal.

homemade potato salad with celery, onions, potatoes, cucumber, and relish.....just like my mom and grandma make....I love it chilled

I love fresh pesto sauce. I grow several types (6 that Iknow of)of Basil and I also grow garlic I just put a few cloves in the ground and as they grow I snip the leaves (thier like grn. onions)off as needed and they keep growing. It makes the pesto soooo! much better, and I use fresh (store bought) parmisian cheese not the can type and grate it myself.

I grow my own herbs as well, but have never tried to make pesto. Do you have any recipes that you could share?

Fruit salads and some ice creams with fruits mixed to a lighter extent are my dishes which i prefer for summer. I dont take too much spicy food cause it may hurt my tummy. Fresh veggies with some fruits would be good for me.

Yes, fruit and ice cream are both very popular at our house in the summer as well. I also like to eat a lot of salads. Most anything cool and light. The heat in Texas during the summer is lethal!
