Have you ever made a Banana sheet cake?

This past week, we had some leftover bananas that were going to go bad, so I thought I would make Banana bread. I was browsing one of my cookbooks and came across a Banana Sheet Cake recipe. It was actually my mother-in-law's recipe that she had submitted to be published in one of those compilation cookbooks that her church put together. Since I had all the ingredients, I whipped one up. Plus, it called for cream cheese frosting, and I had a can of that in the pantry! Talk about lucking out. Anyhoo, I made this cake and it was great. Have you ever made a Banana sheet cake before? If not, what do you do when you have some bananas that are getting overripe?

Very lucky indeed. I've done the "cheaters' method" of mushing bananas and adding them to yellow cake mix. I usually cook it in a bundt pan and put a caramel glaze on top. Mushy bananas also make good smoothies. And if I don't have time to cook, then I pop them in the freezer--it halts the ripening process.

Hi mikinikih. I hadn't heard of this "cheaters' method" of making a banana cake, but that's a great idea! The caramel glaze sounds fantastic! My husband takes spells where he gets the blender out and makes his morning smoothies. He throws in a banana, a handful of strawberries, and a splash of orange juice. I've heard that about putting the bananas in the freezer but I never think to do it when it's happening (duh). Thanks and take care.

Caramel glaze: 2T butter, 3T milk (can use cream), 1/2 c packed brown sugar, 1 c confectioners sugar, 1/2 t vanilla extract. In saucepan over medium heat, melt butter & mix in brown sugar & milk. Boil for 1 minute. Remove from heat. Add 1/2 of the confectioners sugar. Let cool slightly. Add rest of sugar and vanilla. If too thick, add more milk. Pour over cake while still warm. Enjoy:)

No I never made banana sheet cake, but I do make banana bread. I love banana bread and so do my kids. I would like the recipe for you banana sheet cake if you can post it.It sounds good.

Hello babystar1. It's my understanding that myLot doesn't like it when people post recipes. However, they LOVE it when people post links to other websites. Also, I just used a can of Cream Cheese Frosting for the cake. Hope you make it because it's quite good. I'm sure you and your kids will love it. Take care.

I haven't made a sheet cake but banana bars.....and bread. In fact that is one of my son's requests for his birthday...banana bread. I like the bars and they also call for cream cheese frosting. They are yummy!

Hey Jill. Gosh, I've never heard of banana bars, but those sound great. I said to my husband when we were eating that sheet cake, "What a way to get our potassium!" Thanks for sharing.

No, not banana sheet cake, but it sounds excellent! I buy overripe bananas on purpose because they're about half the price of the regular bananas. I make banana bread with them.

Actually my initial plan was to use up the bananas by making banana bread. But I came across that recipe and thought I'd try it. I love to bake but try not to do it so often because we will eat every bite of it. Take care.

That sounds good...I've never made a banana sheet cake before, whenever I have some overripe bananas I usually make banana bread out of it. I don't do alot of baking so whenever I do, my husband sure enjoys it. He'd probably like to taste this cake.

Walijo2008, See the links above to a couple of recipes for Banana Sheet Cakes. The one I make is more like the second link recipe. And I just used straight out of the can cream cheese frosting. Same here, I try to avoid baking, although I love to do it, because we just don't need all those fats and calories. But my husband goes ape when I make something like this cake.

Oh Pearl, I want a piece! I never thought to put cream cheese icing on banana cake! What a dummo I am! I usually put butter cream! That sounds so yummy! My Mom used to make banana cake from scratch! Me, I'm too lazy. I just buy the boxed stuff and go from there! I just love banana anything, bread, cake, bananas! I think the next time I go grocery shopping I will try the cream cheese frosting! Thanks for the tip! Now can I have a piece, please???

Hello there Opal26. I didn't even know there was such a thing as Banana cake! How silly am I? Butter cream frosting would sure go great on the cake I made. This cake was from scratch but it was pretty simple, I must say. I don't think myLot likes it when people put up recipes, but I did find links to 2 banana sheet cake recipes.
