I am a christian or I try to be as clse as I can to one. I have a niece who says she is atheist but I don't think she is, she just likes to get her father(my brother-in-law) riled becuase it is a way she can piss him off and sometimes shut him up.

Satanism and Atheism are actually religions, so I would imagine anyone practising them would know, as would a Christian. Most people are not at the extremes and are what is commonly called "agnostics" (although the strict definition of that is somewhat different), not really knowing or caring whether God (by whatever name) exists - they're somewhere in that middle ground between the three you mention!
