Just limit the amount of cheese you use to make it last longer. I am thinking that you are thinking of more than just spaghetti though, I think you are thinking of other pasta dishes as well. You could easily substitute cottage cheese for ricotta cheese. cottage cheese is much cheaper. But I can't really think of a good substitute for cheese. Maybe some whipping cream seasoned with garlic, but I don't think that would really cut it. I think you should just splurge on the cheese but only use a little to make it last longer.

Hmm, sorry. I love cheese so I really can't think of pasta without cheese. What i do though sometimes, i don't put meat instead I use eggplants. Sauteed eggplants with lots of garlic, then yes, cheese. Just don't use mozzarella or parmessan 'coz it's costly. You can always use local cheese :) Oh, btw, you might also want to try Penne pasta, instead of spaghetti..

that sounded so funny to me to see you say spaghetti is too expensive to cook, here in the USA when you poor you eat spaghetti, it is the cheapest thing to cook, little hamburger, some spaghetti, and sauce. Or leave out the hamburger and it cheaper. Could you tell me what makes it so expensive in your country, you said the cheese, leave the cheese off. I know it taste better with it but if that is the problem you don't have to have the cheese on top. I don't know of anything that takes the place of the cheese. Do you put it on top, would not see a reason to put it on the pasta when cooking, or do you use it in the sauce. We here have the real thing, in chunks to grate our selves, and we have already grated in a bottle, of course the real thing is so much more expensive, so we use the bottled, and most times you can get a off brand that is half the price. Pasta dishes is probably the least most expensive thing we have to cook in this country. I am sorry that cheese is so high there. I couldn't live with out cheese.

hi jatacs what is spaghetti without cheese and hamburger in the tomato sauce, there are in our US stores some cheeses that are lower in price like the mexican brand cheeses and they taste everybit as good as the more expensive, budget on something else so you can have some cheese and use grated or shredded cheese as it goes further so lightens up the budget but use cheese, please.

Good substitues for the cheese... Umm... Fresh Vegatables, that are good for you... Try getting like zuccini, tomatoes, yellow squash.... Take this into a pan after slicing into rounds... Prep the cooking an with some oils.. or spray... add a little herb seasoning... if you have it.. and boom.. I saw a cooking show where a complete pasta garnish was made out of fresh green herbs.. like parsely or basil with chopped tomaotes in the blender and added to the noodles of your choice.. Looked great!
