I know red potato's are preferred for making things like potato salad. But what other dishes are red potato's preferred for?

Hi! I missed your post, but it is better late than never. I use red potatoes for almost any potato dish because they are more firm. I like them in casseroles, in soups (the kind where you put meat, a potato for each person, a piece of carrot, some pumpkin and add rice at the end). I also use them for fries and to make a bbed of diced potatoes, onions and carrots when I bake pig.

A potato for each person? I never knew there was a "method" to how many of what you use. Many recipes I double because I don't do side dishes with every meal as the kids barely eat the main meal like a casserole nonetheless extras. You make a bed of veggies like that when you make porkchops? or pork roast? Or ? Anything else you add to that? Sounds simple & I like simple.

My mom used to put a roast in a crockpot, and then put little red potatoes in along with carrots. It was so good! The potatoes were delicious, and put together with the roast and carrots, it was one awesome meal.

It is an awsome meal. However, the roasts that are affordable are too fatty and don't always agree with our digestion as we've gone to leaner meats like turkey & chicken.

my mother used to boil potatoes as a side dish for dinner - I liked them with just a bit of salt on them Actually, because they are more moist to begin with, they hold up in dishes that require a lot of cooking like stews

That's true... I've been thinking about making a beef stew... the sales though for beef haven't been the best no matter the cut it seems.

Red potatoes are awesome when you are making a roast with potatoes and carrots. The white potatoes that I typically buy tend to get very, very mushy when I cook them for a long period of time (which is what I typically do when I am making a roast) but the red potatoes while they still get mushy with a long cooking time don't fall apart as completely as the white ones do. Plus, I think that they have a better flavor in this preparation.

i put potato when i cooked some dishes, the most easiest way is to combined it with corned beef and egg. if you are a vegetarian just saute corn, carrots and potatao in margarine.

I use red potatoes when I make corned beef. They hold up a little better than regular russet potatoes. That is really the only time I use them other than making roast veggies for the same reason. They hold up better.
