Gazpacho

Does anyone have a recipe for a good gazpacho. I've tried a couple of recipes but none of them seem to be as tasty as the gazpacho that I get in a restaurant. Thanks in advance

hi laureninLa I never have used a recipe for this as its just eggplant and ripe tomatoes and greeen peppers and half a large onion all chopped up and cooked until they are soft; I try to use about the same amountof all the veggies,and add a little olive oil and some chopped garlic and a hefty amout of basil.To me it always comes out great and even my son who is very picky liked it.I do not add a lot of water as I love it thick and full of flavors of allt the veggies too.The combination of flavors just cannot go wrong unless it has too much water added or is cooked so long the veggies lose a lot of flavor.

Hi Hatley. I never thought about adding eggplant. That sounds good. I think that I will give it a try

Hi Lauren, I´m sure that you will find many gazpacho recipes online, even with a video showing how to do it. I do it the easy way: with a blender. I put tomatos (3), sweet green pepper (half if it´s big), 1 cucumber, bread, olive oil, bunch onions, fresh garlic to taste, salt, pepper. I serve it iced with diced cucumber, tomato and sweet pepper in small dishes so that everyone can put what they want as topping.
