A small group of us are getting together to fix our favorette receipes so that they are healther. I know you can get cook books that have already done this, but we thought it would be fun to do this with old family favorettes. Maybe we will even come up with enough to make a cook book of our own.

That sounds like a great idea. The fact that you are all using old family favorites, I really think that you could put them in a custom cookbook and possibly sell copies of this book to other people that you and your friends know. The money that you would raise from the sales of these cookbooks could possibly be donated to a local women's shelter or something like that. Of course, you don't have to do this, but it would be a great fundraiser.

I have been doing that lately without putting it into words. But your post expressed just what I am doing. Mostly I am using less oil and less spices ( at least the ones that don´t agree with me anymore). Fortunatly, I´m still a good friend of onions and garlic but I use a lot less pepper than I used to.

Good for you! Favorite and healthy is as good a combination as it gets. Good luck with the recipe book!

That would be a lot of fun. Our church is putting together a cookbook as a fund raiser for our Women's Ministries and outreach. I try to put in some healthy/tasty things.

I do this with my old family favorites, too. I leave out shortening, usually. When a recipe calls for shortening for a sauce I know that I can only use half the amount and get the same results and I can substitute healthified margarine for butter in sauces. Draining meat and washing it in a colander with hot water gets rid of a lot of fat--also flavor, but you can make that up with herbs and spices. In baking, I use applesauce instead of butter or margarine for at least half of what's called for.

And, unfortunately, it's the fat that gives the food the taste, with or without the spices. Without the fat, the food falls flat and is bland.

That's very true! But I have had some success with re-training my taste buds to appreciate the different flavors that the substitutions give the foods. I've found that I can resist high-fat and calorie goodies by convincing myself that they are no better than rat poison. It's a game of fooling myself until I actually believe it.
