I have never made gingersnap cookies. My mom always bought them when I was home and would give me some with a glass of milk to dunk them in. They were very crisp cookies. Is there a variation to making soft ones as well? I have never seen anything but the harder crisper cookie.

I have never really had a soft ginger snap cookie, I think that is where the snap comes from because they are so crispy. However, I guess if you really wanted a softer version you could probably just reduce the baking time by a couple of minutes that way they would naturally come out softer. The baking time is what makes them firmer so just reduce it and enjoy.

Omg! lol I was just reading about a ginger snap cookie my friend it was from Kyra Effren shared to Nick Malgieri the author of the eBook that im reading right now. As I look to the recipe i think it doesn't have a soft version since it only uses 1 egg and 1 stick and a half of butter so its dry, you can even roll the cookie dough using your hand. The name also indicates that i should have a snap sound so it should be crispy i guess. The ginger snap cookies in the eBook that i just download uses three types of ginger candied, ground, and fresh.

That is an awesome description! One of my friends found a recipe for a soft gingersnap cookie and sent it to me. I will try it for Christmas.
