Healthy afternoon Banana Muffins are done...

My dad bought bananas and i absolutely hate them i don't know why but i really don't like the taste when it gets 2 days old they become very sweet.He always likes to eat it with chocolate syrup and some roasted peanut (the salty one) and he sometimes brings alot of bananas home that i get frustrated by the fact that some will be going to the garbage bag or to the compose (That I made w/ my brother). So i decided to put some in the freezer and baked some into muffins. What i liked about this muffin is that its most of its sweetness are coming from the mashed banana (with a little chunky bits of banana) so its low in sugar and i didn't use butter or margarine but instead vegetable oil.My mom loved it because it wasn't that sweet and she made it as her afternoon tea snack (she is not a huge fan of sweets). Bananas are really healthy so your dad is right in always eating or having a few around but I would do without the chocolate syrup and roasted peanuts . I don't know how to bake or really tried baking although I cook, yeah maybe I should learn how to make banana muffins or to bake anything one of these days. I have a cockatoo ( a large parrot) and pet turkeys, yes pet cause we don't eat them (my children will kill me if I did, perhaps later I would learn to slaughter when they multiply cause the hens have eggs already), they take care of all the over ripe fruits in the house

oh louievill have to share this. my grandad called to me when I was a kid on our f arm in South Dakota,"Patsie come see these hens, I believe they are sick." I ran over to where he stood under on of the transparent apple trees, there on the ground sprawled all over were'four hens. they had been eating semi rotten wind fall transparent apples. they were not sick. lol they were actually drunk. later on it wore off and they got up and went into the hen house. I still chuckle about that. drunk hens.

We all enjoy bananas and the potassium benefits it provides. I prefer eating them before they start to get soft and spotted. When they do that is when I let them sit another day or two and start baking. Sometimes we make banana bread, banana bread muffins or cookies and freeze some of the loaves and cookies for another time. Other times we make pudding or a shake or smoothie. Bananas are sweet and don't really need a lot of sugar added to the recipe. It was really nice of you to bake for your family and make something that your Mom really enjoyed with her afternoon tea!

ho pepai try bananas when they are still a bit g reen as they are not cloyingly sweet.as a diabetic I can eat a greenish banana without'it doing a number on my blood sugar.I love banana muffins made with chopped walnuts. so good wow. not too sweet I have to'use splenda instead of sugar.I love bananas for the potassium and magnesium in them that keeps me healthy and stops me from getting those painful leg cramps in the middle of the night.

but aren't they taste a bit bitter i mean starchy bitter hehe... I like mine perfectly light yellow with out the dots Walnuts are yummy

We often eat fresh bananas as dessert after meals. We also buy banan cakes or bread for our snacks but at your discussion I might be learning how to make banana muffins. Thanks for posting.

I have a different method of making them, I just put all the ingriedients in the food processor. and once its thick, its ready to bake. usually the over riped bananas do the job the best. so I wait for the bananas to over riped before baking them. My sweetener in baking is either honey or stevia. I already quit sugar. I like them when they were moist.

I really dont like to overmix my muffins they turn cakey rather than scrumptious and crumbly, and thats actually the first rule in making muffin "do not over mix the batter" ohhhh and i realized iu double posted this discussion witha nd w/o picture hehe... thanks for the response captAlbertwhisker!

I do the traditional method too, when i dont feel lazy. you know there are times when we cook food without love. we are just damn hungry and wants to eat.

hi Capt.Albert about stevia, I am a diabetic, could I use stevia in place of sugar as I am t old it does not take much to sweeten' things with? I have never used it but I have to replace sugar with sugar substitues. a

even in my childhood i remembered that my parents feed my banana shakes for the shakes of health, as this drink of banana shake give the extra calcium to the bones and make the digestion strong. personally i do not like the banana shake.
