I tried to make my first fish cakes last night.

I had bought this humungus bag of fish. The bag was opaque, so I couldn't see that it was frozen into one huge chunk of fish. So I opened it and tried to pry the fish apart. There was no doing that. I ended up thawing the entire thing. So I cooked all the fish. The first night with all my fish, I cooked the filets with olive oil, oregano, and a little basamic. Another 1/3 and there was a ton, I tried to make fish cakes and ended up with fish hash.It tasted fine, it just didn't turn into a cake. Looked funny. So I cooked lots more fish. We ate quite a bit, I refroze a lot of fish but I still have some today. My fish hash has mashed potatoes, fish, lemon and pepper spice, black pepper, cayenne pepper and eggs. Lots and lots of eggs. So 1/3 were eaten as fillets, 1/3 were eaten or frozen as as fish hash. I still have 1/3 left. Any ideas about what to do with the other 1/3?

There are many reasons why the fish cake ended up looking like hash instead of a cake, one is that there are too much potatoes so there is too much moisture so the cake did not hold together. Try lessening the potato next time and add more binders like what somebody mentioned flour or what I do is add very fine bread crumbs. Try making smaller patties and use a lot of oil (deep frying)and see to it that the oil is really hot before you drop in the cakes and use something like a screen to fish it out ASAP when it cooks (prevents the food from absorbing too much oil), put in a strainer to allow more excess oil to drip, then wipe with a paper towel. The excess fish I think I would marinate, charcoal grill, brush in more marinate while grilling and then I would prepare lemon butter sauce. I prefer to eat these with rice but others may eat it with what they prefer. Yeah keep any kind of fruit as dessert, after eating to remove the fishy after taste

40 degrees outside. Not really grilling weather here. Marinate sounds good. All the advice sounds good for making it a cake instead of a hash. Thanks, I'll have to try harder next time.

I used to buy cans of salmon and make fish cakes. I used celery powder and chopped onions and parsley. I would put them together with bread crumbs and eggs then make them into patties. My daughter's father(my first husband) liked them. I was thinking recently I would like to make some again and freeze them. THen my daughter could just take out afew and heat them for me. SOme day I hope to do this.

Why not use this fish, make a cream sauce, put in a little lemon and some dill weed and serve on toast?

I could try, but it would be a poor second to my beloved salmon. Plus there is so dang much of it. Thanks and take care.

Sounds great!. We used to take canned salmon and make creamed salmon on toast with peas. I haven't had that in forever. Maybe I'll make that when we can afford some canned salmon. Thanks for the memories. That would be nice if you made some and had some ahead.

Bread them with some bread crumbs and cheese and favorite herbs, cook in the oven until done.( similar to the Kraft product called Fresh Takes) We used canned salmon the other day and made "stuffies" which we buy when some of the stores have them. It is a stuffed clam shell, but you could just make the stuffing and fish and make patties, which would be like your fish cakes. Or cook it and serve it over a salad.

Make a cat happy? Failing that, could you make a fish pie? I don't eat fish myself, can't stand the smell, but a friend of mine makes fish pie all the time.

Interesting concept. What is in a fish pie? I've had meat pies that had potatoes and herbs. I've had quiche, but you're not supposed to put fish and cheese together. Do you know what your friend puts in her fish pie? My cat has been happy for a couple of days now ,but I don't think he can eat about a lb of fish that I have left.

Who says not to put cheese with fish? I have seen it done lots of times. Lots of places put cheese on their fish sandwiches. I did not explain well about the stuffies, but it would be like a box of stuffing mix--we used herb flavor, made according to directions, then blend in about two cups of flaked fish and form patties and bake, or we fill clam shells and bake at 350 until golden brown. A drop or two of hot sauce if you like it is good, or lime juice.

To be honest, I tend to leave the room when someone is preparing fish so I've really no idea. I'm imagining that you'd bind it with a white sauce of sorts, and a potato topping would work. Upon reflection, a pasta topping might work too, with melted cheese. Although I don't like fish, I DO enjoy using up everything that comes my way! Another idea would be a chowder or similar fish based soup.

You could use some of the filets for grilling - better for your health than frying! If you had put some bread crumbs in the fish cakes, you would probably come nearer to getting a cake rather than 'hash' - and not too many eggs! ;-) Sounds as if you are a good cook and will find a good use for all that fish. (Next time, feel the bag - you SHOULD be able to feel whether there are individual pieces or 'one huge hunk' of fish!)

Even if I had felt the bag, I still would have bought them. The price was really good. But I do prefer the ones with wax paper or something between them. Next time, I'll either buy a smaller amount or invite lots of people over had have a fish party. Kind of cold out for grilling right now. Like 40 degrees. Also makes your grill stink fish forever.

Fish doesn't keep very long so if you don't eat soon, I'd suggest that you throw it out.

I know, that's why I have to do something with the rest of it today. Probably will freeze it. It was frozen, then I cooked it, if I freeze it now, it should be fine. I was just hoping that before I do, someone night have some bright ideas. Thanks and take care.
