Who doesn't like jellyrolls? or who doesn't like cakes in general? the answer.... Hmmmm! No one! off course everybody likes cakes in general (except for diabetic people out there) Speaking of cakes... One of my favorite is Jelly roll because its simple to make. Any kind of jellyroll makes me remember my past happy childhood days and I would happily eat one slice of it. In our country its called jellyroll or pianono and its filled with variety of filling to complement or contrast the sponge cake. the cake it self is a sponge type of cake where you beat the eggs until foamy, but what I make one I usually do it beat the eggwhites first to stiff consistency and add the egg yolks to add a more volume to the sponge cake. What makes jellyroll my fav is that its a very homey and simple cake. The cake is moist (unless you over bake it) and very airy, and the filling just heighten that airy sensation with a burst of creaminess and melts and mellow in your mouth. Just a great Taste sensation ride overall. When I first made jellyrolls it really struck fear to me because i don't really know how to roll them out. All my previous jellyrolls where a mess and they have huge cracks. But then a watch a video of how to roll a jelly roll (should have done it in the beginning lol...) and the secret to it is that you have to rest the sponge cake for 3-5 minutes no longer than that, and sprinkle confectioner sugar on a CLEAN white kitchen towel and on the cakes top and unmold the cake in the kitchen towel. Next you would then roll the sponge cake along with the towel this makes the cake more flexible so you can roll it easily later after adding the filling. Rest the rolled cake with the towel for 30 minutes. un roll the resting sponge cake fill with a filling of your choice roll (umm this time without the towel) and dust with confectioner sugar or just simple serve it on its own. For this discussion I have made a Chocolate jellyroll and filled it with a creamy pastry cream added with a little mango extract and mango puree for that summer touch of flavor. I don't care for sugary, gooey stuff. I like more cookie or bread-type of good flavored confections. Luckily I am not diabetic. I do have an expensive taste though. Just wish my pocket book cook foot the bill for that expensive taste. My grandmother used to make a tasty, sweet cake for most of our birthdays. Had a certain flavor I have never been able to copy although I have watched her make the cake dozens of times. Ofcourse she had real vanilla extract and not the poor excuse for same we have now days. Chocolate jelly cake? Hmm.

Yes, I read about the sponge cake. I recall hearing swissroll too. Yes, I recall all the preserves and so forth. I used to read my grandma's and mom's cook books. THey had all that in them. Pastry cream and chocolate do sound good.

well....First of all its not really jelly (jell-o) its a real cake (sponge cake). Its other name is swissroll or roulade (in Danish). Second I think the "jelly" came from the filling associated to it because the traditional sponge cake used is not flavored with anything just flour, eggs, sugar, salt, vanilla, and a small amount of leavener and filled with preserve or jellie preserves like (strawberry, apricot,raspberry) in my case I flavored the cake with chocolate and the filling is a pastry cream.

Delicious recipe, I love cakes too, and this idea of adding mango and mango puree to the jelly rolls, I found terrific, I will try myself. I remember the jelly rolls my mother used to do, with guayaba jelly, and pineapple sometimes, this desert also takes me back to my childhood.

Wow guava jelly yeah I found some pastry shops here in the philippines use it for there jellyroll/pianono. Those little pastries just looks tempting!

I haven't had a piece of jelly roll in a long time. My sister used to make them....last time she made a pumpkin one with a cream cheese filling and it was awesome....I'll have to remind her to whip one up again.

Hello! Sadly, I don't bake. I had baking experience with my sisters in our parents home some years back and it is exciting. It;s a bonding time for us too. But given a chance, I want to bake again. Haven't tasted jellyroll too but maybe I had tasted it already but I just don't know that its jelly roll. LOLz. You are right when you said that who doesn't like cake? It had been a therapy for me when I was sick and alone here at home. My husband is at work while my kids are on vacation and I'm home alone some weeks back. Home alone and sick. Cake and chocolate, I believe helped me eased my pain. =) =)

yeah nobody doesnt like sweets we all do we will always be kids at heart. Ohhh thats good but try to control your self dear when consuming those sugary stuff.

Your discussion just made my mouth water i also love cakes and my hubby but he is diabetic so he eats sugar free things. I like jellyrolls to and my kids love them so i buy occasionally in a bakery. I wont dare make a jellyroll it looks complicated! Nice picture by the way!

Thank you! I know diabetic people have to be very careful and consume sugarfree stuff but sometimes i dont trust does stuff for diabetic people sounds too artificial...
