Corn Muffins

I'm in the mood for corn muffins so this morning I decided to whip up a batch. I can't wait for them to bake so I can slather my nice, warm muffin with butter and have it with my second cup of coffee.
Normally I'm not this energetic so early in the morning but I've been thinking of corn muffins for a few days now and decided today is the day to satisfy my desire.
I probably could have driven to Dunkin Donuts and bought one quicker than it's taking me to make them and I wouldn't have to clean up the kitchen. At least I'll have more than one muffin and my house smells so good.
Although corn muffins aren't number one on my muffin hit parade I do enjoy them occasionally. My first choice is always banana nut followed by blueberry.

@Marilynda1225 My husband likes the jambalaya, it's hard to make a gumbo here in Europe because I do not find fresh gumbos (okras), I bought the file powder (powdered leaves of the sassafras tree), in Louisiana.

@ladyduck corn muffins or corn bread go well with gumbo or jambalaya. I like it with chili too. Usually I'll serve corn bread/muffins with ham as we don't often eat Louisiana type food

I have some corn muffin mix but I'm using it on Thanksgiving. I make a corn casserole with corn, creamed corn, sour cream, and the corn muffin mix. It's delicious!

@katesmeow we usually have corn bread for Thanksgiving too but I guess my Thanksgiving cravings are a few days ahead and I had to make some corn muffins.

I had some cor muffins the other day and they are pretty tasty. I am with you though, Nothing beats banana bread. I think that is the only food that could make me fat but do not have enough money to eat that all the time. lol. See it is good to be poor in some areas. All perspective I tell you

I'm not a fan of corn muffins, but I do love banana nut and blueberry. The best part about not going to Dunkin Donuts is the money you saved and the fact you have more than one to enjoy as well as the warm yummy aroma filling the kitchen if not the house. You don't have that if you go to Dunkin Donuts.

I love a grilled corn muffin. I am sure that your are more normal size than the ones at DD which are gynormous. I will be over later for mine, can you grill it?

I love making muffins when I eat chicken. It just seems like muffins go with chicken.

I had a yearning for corn muffins lat week and made some, too. I think homemade ones taste so much better than store bought.
