My Lunch is Awesome!

I decided to make a baked potato for lunch, with stuff on it. Ten minutes in our old microwave, a little water in a bowl, put the tater in the bowl and cover it with another. I have butter, sour cream & cheese and hot sauce on it. It tastes yum! I was wishing we had some green onions I could cut up and put on top, though. What do you like on your baked potatoes? Do you ever have them for lunch?

Sounds delicious. Not for lunch, but I had it for dinner two nights go with cheese, butter and sour cream. The only way to go!

I've never thought to put them in water - perhaps that would make them cook more evenly. (Did you see my question on your Pretty Woman post?)

I responded a bit ago on the prretty woman post. ..she isn't blocked and I've never seen a reason to block her, lol, so I don't know what she is seeing on her sde. ..so it must be som ekind of error. .is she unable to reply at my posts? This is strange

Hi Sue. I love baked potatoes. I fill my potato with Greek yogurt and a little olive oil. I eat the inside and then go for the skin. Yum!

I had baked potato multiple times but I see them more as a snack or an appetizer because the main staple of Asians is rice. I like adding dried basil on my bake potato. it goes well with cheese.

@CinnamonGrl You can use fresh basil if you like but you have to mince it. If you want to go low carb, Golden sweet potato is a good alternative.

We would eat more rice if my mother liked it. I mostly fix rice for myself at lunch time. Dried basil sounds pretty good, I've never tried that.

I love to eat them when we are traveling in England. They are called jacket potatoes and they put the greatest things on top, curry, tuna salad, cheddar cheese (hubs favorite) chili and coleslaw. Believe it or not I have tried them all and they are all good!!

we normally do a lot of things.Cottage cheese,chili,sour cream etc.Never had them for lunch.Only if I was in London.lol

I love potatoes. I wouldn't want to live in a country with a potato-free cuisine. I don't bake potatoes, though. I boil or fry them.

I love a good baked potato for lunch or any time of the day. I like butter, tomato, shredded cheese, sour cream or ranch style bacon salad dressing topping it.

Sounds yummy but everytime I try to microwave a tater it comes out tough. I like butter and sour cream on mine. Sometimes a little ranch dressing.

It took me a long time to figure out a baked potato in our microwave. If I don't do it exactly as i described in my post, it doesn't come out the right consistency. Ranch dressing is good, too. I've done that before on my potato.

It seemed so delicious . We don't make that , but i get to eat it at KFC when i eat there . Our staple food that's why is rice . But that can substitute for rice and it is so filling .

I fix potatoes more often than rice because I live with my mother and she doesn't like rice. I like it with chicken.

@CinnamonGrl The next day, I had one for lunch with cucumber, tomato, olives, sour cream and Greek dressing. I didn't have any Feta or I would have used that. We have potatoes in the garden, so I am going to think of more of these!

I enjoy cheese and bacon bits on mine. Not sour cream.... yuck...lol I prefer baked sweet potatoes though. :-)
