Peaceful holiday

Three like minded people sure makes for a grease free, tasty feast. The cranberries in the cornbread stuffing really melded with the squash. The squash sliced prettily when I sliced into it. Room mate's egg rolls were scrumptious. She whipped up a cranberry date ginger dipping sauce that highlighted them amazingly. Hubby accidentally cooked the millet too long and made more of a mash than we'd thought good for pudding but that turned into a baked bread pudding. Super perfect- I'd mixed in orange juice and dates and figs. I dolloped coconut cream on each chunk. Oooooh. Rivaled cow cream. And hah. Those chocolate truffles. Addictive with a capitol A. Sweetened with dates. What's a holiday without a little chocolate lurking around?

Hey @Hatley maybe I missed reading about it but how was your Thanksgiving? Did they serve you a dinner with all the trimmings? I know your lunches and dinners always sound so good.

My mum usually makes a chocolate pudding pie for Thanksgiving, but instead we opted for Pumpkin and Apple pies.

@LisaSteinmetz We had an apple pie already this month so I decided to try to see what I could do about making a version of a figgy pudding instead. For Christmas I will probably make some avocado chocolate pudding with a dollop of coconut cream on top.

@sallypup I attempted chocolate st my house making brownies but fsiled miserably tried making them at my sisters house failed there, too! I think your meal sounds just what I would have liked. What my brother in law was saying about the turkey carving it left me with nausea. I am going vegetarian for sure told my sister no more meat meals because she is inclined to make me tons of meals with meat. I have so many in the freezer. I am going to cook myself vegetsian meals next year. What is millet? I have heard the term but don't know what it is?

@Marty1 Millet is a tiny high protein grain. I believe it comes from Africa. It costs quite a bit per pound but it cooks up easily. Its yellow and pretty tasteless so you add things to it like garlic. Most Americans know it as bird seed!!

You just made me super hungry. No Thanksgiving in Latvia unfortunately. When I lived in the states I always made turkey stuffing with sweet and hot Italian sausages.

A totally out of the box dinner. I think of all that I would head straight to the truffles.

@AbbyGreenhill I loved how much of us we put into our meal. I ground the flour for the corn bread. The hens gave us eggs. On and on. And this morning my weight is down a tad more.
