I don't really know who will be the last Jedi, however I do know that Leia and Solo had twins when they were married. The male twin killed solo, however I believe the female twin was the one to contact Skywalker at the end of that movie. So chronologically she may be the last one because her bother went to the dark side.

@sumofalltears Is there 'George Lucas seal of approval' to differentiate between the books that are "canon" and the ones that are just 'fan-fiction' (which is officially called "Star Wars Legends")?
