Corn is not just a side dish anymore...

You know what I have found out? That corn is a great topper on certain types of foods. It is not just a side dish anymore.
I love adding it on top of pizza before I bake it. It gives the pizza a great nutty flavor to it.
Tonight... I used it as a topping on my baked potato. If you don't have any meat, corn is a great filler, plus...surprisingly it tastes really good. Especially when you add globs of butter, and some cheese.
It is a guarantee show stopper! It will clog your arteries, and give your taste buds a conniption fit...all at the same time! LOL

Oh, I am a big fan of fresh corn and some recipes with canned or frozen corn. I used canned white corn yesterday in a great recipe. Drain the corn, cut up a red bell pepper, put them in a pan to warm up a bit together, (I used olive oil in the pan). Get them out and mix with cilantro and lime juice. Great side dish for our chicken taco's last night!

We don't eat meat, so corn mixed other veggies are often on the menu here. A local farmer grows it here and it is wonderful.
