Here in about an hour and a half I'll make dinner. I am making pork chops, mushroom rice and collard greens. Hopefully I will have enough to take for lunch tomorrow. I work 1-530 tomorrow afternoon but have some stuff to do in town and so I will go into town before work and get it all taken care of, since I dont work again until Friday.
I was hoping to pick up some.extra.hours, but I don't think it's going to happen this week.

I'm not big on mushrooms and collard greens myself, but pork chops are yummy, especially when tender and juicy. Have you ever tried a German dish called Schnitzel? It can be made with all kinds of meats, but the original is pork, tenderized, seasoned, and breaded, and it is delicious. Even my husband, who isn't big on pork, likes it.

Yeah I've had it before. I love mushrooms and collard greens. I actually love all greens, spinach, mustard, turnip. You name it, I like it. There are very few foods that I won't eat..

@thislittlepennyearns I wish I could be less picky like that, but there are a lot of foods that I just can't handle. I try to eat a good variety of what I do like though, and I'm nowhere near as picky as some people I've met.

@mommyzhuuraan you should give them another try. There is just a few foods I won't eat and one of them is because I can't. I'm allergic to it. The others I will eat if they are the only option.

During the school year I usually make my lunches on Sunday for the whole week. I just bang out 5 of something like a salad or something similar from Skinnytaste. That way I don't have to worry about having leftovers and, if not, scrambling for something. Less for me to stress about.

@thislittlepennyearns I top them with marinated or seasoned grilled chicken. It is what my trainer suggests. I do that some weeks and alternate with different stuff other weeks. I still try to be good.

We had chicken casserole tonight with a green bean casserole, glazed carrots, and cranberry sauce. It was good. We are having leftovers tomorrow and then pork chops on Thursday.

Wow, I love pork chops! As for me, I had a barbeque, fried milkfish, and some steamed vegetables. My mom usually is in charge of the kitchen since she's the expert. I can cook but just the basic Filipino food. I am planning to take some culinary short courses next year so I can prepare extraordinary dishes for my family.
