tonight's dinner is completely uninspiring

I have a few leftovers in the fridge, and somehow they're going to make up our dinner. I have... A cheesy rice & ham casserole (the recipe called for broccoli too, but I served that on the side instead of in the casserole since reheated broccoli gets kind of weird), some taco seasoned ground beef, a serving or two of chili, a little bit of homemade refried beans, some leftover unsauced fettuccine, more cooked rice, 2 kinds of salad mix, a decent sized chunk of leftover ham, and then things like cottage cheese and yogurt. Maybe I'll chop up some more ham and mix that and the leftover cooked rice with the leftover cheesy rice casserole and have that again for dinner. I could probably pack the seasoned ground beef and refried beans with some tortilla chips for one of the kids' lunch tomorrow. What's on your table tonight?

I do those "somehow" dinners where there's too many leftovers - I call it "making a plate" . . . a little of this and a little of that. Tonight we will have udon (Japanese noodles), rice balls with seaweed and red fish eggs (roe), and baby octopus . . . believe me, it's super easy but I won't want leftovers for these.

@crossbones27 I used to be addicted to Top Ramen . Do you dress it up? We sprinkle sliced up green onions, bean sprouts, and sometimes bamboo shoots . . . my dad even dumped in one raw egg (which gets kinda cooked in the hot broth).

@much2say I have done pretty much all you can do without the egg. Will have to try that. Did bacon, salsa, tuna, chicken. Who knew you could do so many things with Ramen?

Is it me or does food just taste better the 2nd time around. All though, I am going to challenge you a bit. You putting to much work in it. That is OK miss lady, sure family will love it.

I just didn't want a fight with my picky eaters tonight. It worked out okay, I think I only have one serving of the cheesy ham & rice left, and one of us will eat that for lunch. I cut up a watermelon, so they ate the dinner so they could have more watermelon!

It sounds more inspiring than my dinner. I had cucumber, sliced tomato, and honeydew melon. My hubby had a Digorno Pizza.

You know,most leftovers could made into some kind of soup or stew.You can add onions and spices as well.
