I made Kimchi last weekend. Kimchi is a staple food in South Korea, maybe in the north of Korea, too. It is a salted and fermented cabbage eaten as a side dish. It can also be used in making fried rice, kimchi soup and other Korean recipes. I am fond of eating Kimchi but it is costly to buy every time I crave for it. 1 small glas (50g)of Kimchi from the Asian supermarket costs 4€ and I eat it only for 2 meals. With that price I can already make a kilo of Kimchi. So, this is the reason I made it. Yesterday, I made a Filipino rice porridge called Lugaw, with chicken meat as hubby and I missed it. It was good to warm our bodies from the winter coldness. I added a bit of Kimchi in my bowl of chicken rice porridge and it was so delicious. Have you tried Kimchi before? Do you like it? I guess the counterpart of kimchi in Chinese is "chai po" which my mother usually made before when we were young. It is made of fermented raddish. We use it to go with our porridge (lugaw) and sometimes my mother chops them thinly and mixed them in scrambled eggs. It is salty and crunchy.

I have not wanted to try it. I have heard it is very spicy. I like some fermented foods, though.

I don’t like too spicy food but I can handle when it is not so spicy. Making my own kimchi, I can control how spicy it becomes. Thank you @Aquitaine24.

My brother always buy kimchi but I really don't try. I'm not interested and I don't think I will like it. Glad to know you like this Korean food

@Aquitaine24 I am sure that the kimchi fried rice would be yummy. I liked the sour tangy taste. It really enhanced the flavour as side dish.

I like kimchi but I don't know how to make it. I have once watched it on YT looks so easy but it is not for me. Glad you can prepare keep kimchi. I also miss lugaw. I might cook lugaw next week.

Yes, it is easy to make @jobelbojel. There was a Filipina who was making and selling Kimchi here but she is in the Philippines now so I tried to make my own, Lugaw is good especially during cold season. Thank you.

No, it is not time consuming to make @JudyEv. It depends how many kilos of cabbage you make for kimchi. I only make for 1 kilo. Thank you.

@Aquitaine24 Yes but you can already eat it after a day of fermentation. Well, the longer it is fermented, the tastier it becomes.

No, I've never tried Kimchi; and I don't think I would like it. My husband tells me tales of the women making Kimchi in Korea and burying the crocks in the ground to ferment.

Ohhhh, I would love some of that ! I am craving kimchi fried rice - I have not had that in a long time. I have not had lugaw, though I've had the Chinese and Japanese version of rice porridge - I'm pretty sure I'd like it .

I really like kimchi but Pretty hates it. I made a batch of it a few months ago and Pretty decided to taste it. She ran to the trash can and spit it out, than asked how I could eat it. I laughed and told her that leaves more for me.

I've eaten kimchi once and it tasted really good, usually I eat kimchi with noodles
