Zucchini - great even raw!

i have lots of zucchini in the freezer left over from my garden last summer...can you give me some new ideas using it? Please share your favorite recipes!

I've got a general recipe for, well, I suppose you can call them lazy cook soups. I would do some onions and bacon in a little bit of oil, and then add the zucchinis and stir fry the lot until they are down. Then I usually take a packet of cream of chicken soup and add that to the mix (prepare as per instructions), wait for it cook and finally puree it with a blending rod. I do this with spinach, broccoli etc. It's quick and easy.

here is a recipe for you Louise's Chocolate Zucchini Bread Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Dessert Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 lg eggs 2 cups sugar 1 cup oil 2 ounces baking chocolate 1 teaspoon vanilla 2 cups zucchini -- grated 1 teaspoon cinnamon -- or more 1/4 teaspoon baking powder 1 teaspoon baking soda 1 cup chopped nuts -- or more 3 cups flour 1 teaspoon salt Beat eggs til yellow. Beat in sugar & oil. Melt chocolate. Stir into egg mixture. Sift flour with salt, cinnamon, baking powder & soda. Stir into well oiled pans - angel food or 2 9x5 loaf pans. Bake 350 for 1 hour 30 minutes [START WITH LESS TIME). Cool in pans for 5 to 20 minutes. Turn out on rack and cool. hope you liked it

I love zucchini bread. I would also make cakes using zucchini, chocolate being the overall favorite amongst the crowd.

Yes do you have a slow cooker get a roast and add it to the roast with carrots and potato and onions peppers basil tomato juice garlic and whatever you have yellow squash zucchini black pepper and it comes out good I have a ton of it in the deep frezze too

here are some recipes for you Zucchini Tomato Frittata 45 min 20 min prep Change to: servings US Metric 8 eggs, beaten 1/4 cup grated parmesan cheese 1/2 teaspoon salt 1/4 teaspoon ground black pepper 2 tablespoons minced chives or green onions 2 tablespoons extra-virgin olive oil 2 zucchini, thinly sliced 1/2 cup thinly sliced vidalia onions 1 medium tomato, peeled and chopped 1 clove garlic, minced Preheat the oven to 350°F. In a medium bowl, whisk together the eggs, Parmesan cheese, salt, pepper and chives. Set aside. In a 10-inch ovenproof non-stick skillet, heat 1 tablespoon of oil over medium heat. Cook half the zucchini slices until tender, about 3 minutes, then move them to a small bowl. Repeat with the rest of the zucchini and reserve. Add the remaining tablespoon of oil to the skillet and cook the onions, tomato and garlic for 5 minutes, or until the onions are tender. Return the zucchini to the skillet, evenly distributing it. Add the egg mixture, and cook for 3 minutes, or until the bottom of the frittata is just set. Place the frittata in the oven and bake for 12 to 15 minutes, or until it is completely set and golden brown. Invert it onto a plate, cut into slices and serve. hope you liked it here is another recipe Zucchini Lasagna 2 1/2 cups zucchini, sliced 1/4 inch thick (about 2 medium) 1/2 lb lean beef, ground 1/4 cup onions, chopped 2 small tomatoes, cut up 1 (6 ounce) can tomato paste 1 clove garlic, minced 1/2 teaspoon dried oregano 1/2 teaspoon dried basil 1/4 teaspoon dried thyme 1/4 cup water 1/8 teaspoon pepper 1 egg 3/4 cup low fat cottage cheese 1/2 cup mozzarella cheese, shredded 1 teaspoon flour Cook zucchini until tender, drain and set aside. Fry meat and onions until meat is brown and onions are tender; drain fat. Add next 8 ingredients and bring to a boil. Reduce heat; simmer, uncovered 10 minutes or until reduced to 2 cups. In small bowl slightly beat egg. Add cottage cheese, half of shredded cheese and flour. In (1 1/2-qt.) baking-roasting pan arrange half of the meat mixture. Top with half of the zucchini and all the cottage cheese mixture. Top with remaining meat and zucchini. Bake uncovered at 375 degrees F for 30 minutes. Sprinkle with remaining cheese. Bake 10 minutes longer. Let stand 10 minutes before serving. hope you liked it

Try roasting them with capsicum, pumpkin, onion, just add garlic and your favourite herbs. Makes for a great salad or pasta. I've also got a recipe for zucchini frittata. Grate zucchini and onion, make omelette mix pour into baking dish, top with cheese and bake until egg is set.

i love fritata's! i never thought about using it for one! I'm curious, though, when you say roast them with herbs, etc., how do you prepare the zuchinni for that? Do you grate it, chop it, cut in half? Thanks for the ideas

Chop into big chunks or slice thinly, it all depends on how you like your vegies.

Zucchini boats Boil 2 zucchinis for about 1 and 1/2 min. just enough to tenderize Cut 2 zucchinis in half lengthwise. Dig out centers of both halves leaving about 1/4 inch. Put zucchini in frying pan with 2 tablespoons olive oil, cooked bacon;crumbled, 1/4 parmesan cheese, 3/4 c. chopped mushrooms 1 clove garlic 2c. diced tomatoes 1 onion 1/3 c. dry bread crumbs 2 tbls. parsley salt and pepper Bring to a boil, then cook for about 5 min. Let cool for a few min then scoop the filling into the zucchini halves. Bake at 400 degrees for 20- 25 min. These are very good!

My very favourite is fried zucchini Slice z's diagonally and lightly fry in Olive oil till Just tender - place on kitchen paper to get excess oil out while you fry the rest. Pile them in a bowl and pour over a good amount of vinegar and some salt. Serve with natural yogurt with crushed garlic added and also finly chopped mint. Really yummy hot or cold.

Have you ever tried "Zucchini Apple Bread?" One of my girlfriends used to make it.. And I found it to be a very unique, yet interesting dish that didn't taste all to bad either. The ingredients would be: - 4 eggs - 1 cup brown sugar - 1 cup of white sugar - 1/2 cup of vegetable oil - 1 teaspoon of vanilla extract - 1 1/2 teaspoons of baking soda - 3 1/2 cups of all purpose flour - 1/2 teaspoon of salt - 2 teaspoons of cinnamon - 1/2 cup of chopped walnuts - 2 cups of peeled, chopped zucchini - 1 cup of chopped, peeled apple The Directions are: - Preheat your oven to 350 degrees . Then grease 2 9x5 inch loaf pans - Then in a large bowl, combine the eggs, white sugar, brown sugar, oil & the vanilla until it is well blended. Then in a separate bowl, combine the flour, baking soda, salt & the cinnamon. Then stir in the flour mixture in to the egg mixture. Then fold in the walnuts, zucchini as well as the apple. Then pour in to the prepared pans. - Once after that is done, put in the oven. And bake for 1 hour. Until the top springs back when touched very lightly in the middle. Then let cool for 10 mins. before moving the bread to a wire rack to cool completely. Put some butter on the bread once you decide to slice it & serve it to every one. I hope if you do indeed try this that you end up enjoying it, as does the other people you may share it with. Another recipe I could give you that I have made myself. Would be something that is called "Zucchini Chive Dip." The ingredients are: - 1 (8 ounce) package of cream cheese, softened - 3 tablespoons of milk - 1 cup of shredded zucchini - 3 tablespoons of chopped fresh chives - 1/8 teaspoon of salt Directions are: - In a medium bowl, mix the cream cheese along with the milk in the bowl until it well blended. Then mix in the zucchini, chives, as well as the salt. Then chill in the refrigerator, for probably an hr or so & then serve. This is perfect to have with vegetables. Such as fresh cucumber, carrots & baby tomatoes. It's very simple to make & I hope you enjoy it as much as we have when we made it. All the best. xx

Actually, I came upon this idea when i too had tons it from my garden. My kids were not thrilled that I planted zucchini. I was..I Love it! So, when I made spaghetti sauce I shredded up some zucchini in it. 1. It used up the zucchini. 2. It made a healthy addition to the sauce. 3. My kids never knew it was in there. Guess what, they are young adults now and all of them love zucchini! LOL It worked. ;)

We love Zucchini, It makes great bread, batter fried, chopped in all italian sauces, veggie mixture, zucchini casserole. The veggie mixture is so good. We use diced onions yellow squash and zucchini. We fried them in olive oil and then made a cream sauce over them. YUMMY

thinly slice the zuc, add salt, pepper and olive oil, place on a cookie sheet. pop it under the broiler until the zucs are about to burn. enjoy on a pizza or make a baked pasta dish do the same thing as the zuc but add red pepper, onion, mushrooms and place them all under the broiler. smoked mozzarella a jar of good red sauce, homemade is best mascarpone cheese (like italian cream cheese) cook the pasta a few minutes short of done, add them to the red sauce and mascarpone cheese, the heat from the pasta will melt the mascarpone. add the veggies, mix together, put it all in a baking dish. top with the smoked mozz. heat for about 20-25 minutes or until the cheese is getting that 'burnt' look.

Or try it in a Malaysian-style chicken curry: 2 T./30ml peanut oil 4-6 chicken thighs, skin and bones intact 7cm/3" length fresh gingerroot, minced 6-8 cloves garlic, minced 1 onion, minced 4-6 Thai birds-eye chili peppers or to taste, minced 1 can (4 oz./414g) yellow curry paste 1 cup/250ml water 8 oz./225g baby bok choy, larger head separated 8 oz./225g sliced zucchini 1 can coconut milk 2 T./30ml nuoc mam (fish sauce) or to taste 2 T./30ml tamarind powder or paste, or to taste Heat the oil and brown the chicken on all sides. Remove to a plate and reserve. Add gingerroot, garlic, onion and peppers to pan; cook, stirring until intensely fragrant. Stir in curry paste and cook, stirring, 2-3 minutes. Return chicken to pan and pour in juices that collected in the plate. Add water. Cover and simmer 30 minutes. Remove chicken skin if desired at this point. Add baby bok choy; cover and simmer 10 minutes. Add zucchini and half the coconut milk; cover and simmer 5-10 minutes. Stir in remaining coconut milk and remaining ingredients. Remove from heat, taste and adjust tamarind and fish sauce as seasoning. Serve with steamed rice. Have fresh mango for dessert.

Lemon Zucchini Bread SUBMITTED BY: Rebecita "I thought my mom made the best zucchini bread - until I added lemon! This is a wonderful, light zucchini bread that's not too sweet." INGREDIENTS 1 1/2 cups shredded zucchini 3/4 cup white sugar 1 egg 1/2 cup vegetable oil 1 1/2 cups all-purpose flour 1/2 teaspoon salt 1/2 teaspoon baking soda 1/4 teaspoon baking powder 1 teaspoon ground cinnamon 2 teaspoons lemon zest DIRECTIONS Preheat oven to 325 degrees F (165 degrees C). Grease an 8x4 inch loaf pan. In a bowl, beat together the zucchini, sugar, egg, and oil. In a separate bowl, sift together the flour, salt, baking soda, and baking powder; stir in the cinnamon and lemon zest. Stir the flour mixture into the zucchini mixture just until blended. Pour the batter into the prepared pan. Bake 45 minutes in the preheated oven, until a knife inserted in the center comes out clean. Remove from heat, and cool about 10 minutes before turning out onto a wire rack to cool completely.
