Great Way To Make Potatoes

With Easter in a few months, I thought that I would share my cooking strategy with you. We have over 60 people to our home for Easter Dinner each year. I cook for 3 days for this wonderful occasion. On Easter morning, I go to church then I come home and do the finishing touches. I usually end up preparing two Buffet tables of food so everyone has something that they love available. Some of our guests are vegetarian, some meat lovers, some desert lovers. Everyone loves mashed potatoes so I always prepare 15 - 20 pounds of mashed potatoes. Last year, I found a recipe for Crockpot mashed potatoes. I tried it just to save me some much needed time the main day of the meal. It was wonderful. I thought I would share this with you for you Easter Feast. They do not taste warmed over. In fact, just the opposite, it taste very fresh made. These mashed potatoes are great and you can get them the morning of or the day before the main event without having to rush at the last second. The recipe calls for bouillon but I did not use it at all and will not use it this year. Enjoy! Crock Pot Mashed Potatoes 5 pounds red potatoes, cut into chunks (I used regular white) 1 tablespoon minced garlic, or to taste 3 cubes chicken bouillon 1 (8 ounce) container sour cream 1 (8 ounce) package cream cheese, softened 1/2 cup butter 1/4 teaspoon salt and pepper to taste DIRECTIONS In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water. In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency. Transfer the potato mixture to a slow cooker, cover, and cook on Low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste.

Thanks for another great recipe. I do put sour cream and garlic in my mashed taters sometimes, I have never tried cream cheese. I will try that it sounds good. Also putting them in a crock pot is a good idea, they stay hot that way.

I love Garlic in so many things. I also love sour cream. It just seems natural to add them to mashed potatoes.

These sound great, I think I will voluinteer to make the potaots for Easter this year. I like recipes that can be made ahead of time. What a lot of cooking you will be doing. Thanks for sharing the recipe.

What a fantastic idea! I'd probably through in more garlic, and maybe grate some sharp cheddar or parmesan in, too. You can also mix up the veggies a bit by adding some cubed parsnips, carrots or celery root.

That is awsome dear. Thank you for sharing it. If you would like some variations, try this sometime. Layer your mashed potatoes with cheese inside, or spinch inside. Cover with mashed potatoes. Or, melt butter and stuffing, and sprinkle it on top of the mashed potatoes, and broil one or two minutes. It's great!! Thank you for sharing your receipe with us.

Woww!! you must be some cook to make so much food..awesome! The recipe soundsgreat will try it this weekend. But I have one preoblem, I don't have a crock pot, can I use a pressure cooker or something like that? I love potatoes and mashed are definitely a favourite. Please do let me know what I can use instead of a crock pot.

No, a pressure cooker will not work. The crockpot keeps it at a low temperature. I really dont know of any other appliance that will work except the crockpot. Sorry.

Wow, that sounds great! I would never have thought of doing that! I would have thought they'd get dried out... I'll have to pass this on to my Mother In law. She has big meals when we all get together and occasionally she'll do the potatoes early, then just nuke them. They don't taste as good as when they are fresh... So this could work great for her! Thanks!

I've done that too, Bev... 10 pounds of mashed potatoes that I have to reheat. You're right that they don't taste as good as fresh-made. Sometimes, though, it's impossible to be standing there mashing all those potatoes when you have a house full of guests. villageanne, like Bev, I would have never thought of the crockpot because I assumed they'd be dry. Now, for the fact that I bake cakes and such in mine, I don't know what on earth led me to assume that LOL Thank you SO much for this recipe. This will be a lifesaver for buffets!!

They are not dried out at all. I was amazed at how good they tasted. No "left over food" taste or anything. The additions make them special and I had no left overs after the dinner. Eveyone loved them. I hated to share that they were this easy to make. I love it when they brag up my cooking. LOL The more they brag, the more they cook.

Ok. I am bowing down to you in admiration. I cannot imagine, nor would I ever attempt to cook for 60 people. I would be a stark-raving lunatic! The potato recipe sounds awesome. I would have never thought of doing mashed potatos in the crock pot. Thanks for the idea!

Wow now I am hungry. That sounds really good. I made cube steak with mashed potatoes and gravy tonight but now I want your potatoes as they sound so much better. thanks for the recipe can hardly wait to try it. Now I have potatoes on the brain. I might have to look up a twice baked potato recipe in my cookbook while I am at it. LOL

This sounds really good also , I am going to have to try this recipe as well . You have some interesting recipee idea's up here . I don't care for just plain potatoes so I don't eat them very much but if something is done to them I really enjoy them . You do a lot for Easter by the sounds of it . I have my big meal for Christmas and that is the only time of the year that I enjoy cooking .

I cook for all holidays but for Easter, I do all the cooking for our family. At chritmsas we only have about 20 people at our home. Thanksgiving we go to our daughters and I only help do the cooking.

This sounds good when you're cooking for a crowd! Ought to be great for Thanksgiving and Christmas. My family, like most in this area, goes to a special buffet after church on Easter. One might eat potatoes with meats from the carving station, but seafood is a major part of buffets in our area. Raw clams and oysters and a lox-and-bagel table are the most popular parts of the quality buffets. Most have an omelet-to-order station as well.

Thanks for the recipe i have to try this one well first i need a crock pot lol but as soon as i get one im making this dish. I love potatoes. I usualy make fries "home fries" my kids love them

Now you got me drooling again, cookies and mashed potatoes, I gain 5 pounds just reading your posts. Using the crockpot is a great idea as a warmer...wonder why I have never thought of that.
