Nothing could be simpler than making this wonderful cookie dough and store in the refrigerator till you are ready to bake them. This wonderful lemon cookie recipe makes 2-3 rolls that can be baked at different times.. Enjoy LEMON REFRIGERATOR COOKIES 2 sticks butter or margarine 1/2 cup granulated sugar 1/2 cup packed brown sugar 1 egg 1 TBSP shredded lemon peel 2 to 3 TBSP lemon juice 4 cups sifted flour 1/4 tsp. baking soda 1/2 cup finely chopped nuts Cream butter and sugars; add eggs, lemon peel and lemon juice; beat well. Blend flour and baking soda; add to creamed mixture. Add nuts and mix well. Shape the dough into 2 or 3 rolls, about 2 inches in diameter. Wrap each roll in waxed paper. Chill in refrigerator until firm. Cut rolls into 1/4 inch slices. Bake on a cookie sheet in a 375 degrees oven for about 10 minutes until lightly browned.
