Make Your Lemon Cookie Dough & Store In Refrigerator

Nothing could be simpler than making this wonderful cookie dough and store in the refrigerator till you are ready to bake them. This wonderful lemon cookie recipe makes 2-3 rolls that can be baked at different times.. Enjoy
LEMON REFRIGERATOR COOKIES
2 sticks butter or margarine
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 TBSP shredded lemon peel
2 to 3 TBSP lemon juice
4 cups sifted flour
1/4 tsp. baking soda
1/2 cup finely chopped nuts
Cream butter and sugars; add eggs, lemon peel and lemon juice; beat well. Blend flour and baking soda; add to creamed mixture. Add nuts and mix well. Shape the dough into 2 or 3 rolls, about 2 inches in diameter. Wrap each
roll in waxed paper. Chill in refrigerator until firm. Cut rolls into 1/4 inch slices. Bake on a cookie sheet in a 375 degrees oven for about 10 minutes until lightly browned.

I love lemon cookies. They are so great to have with tea or coffee. Sometimes you just want a light cookie to enjoy.

Oh yum. My family all love lemon flavor...lemon anything! This is right up our ally! I have copied and saved it to my recipe file. Thanks so much. I can make these and mail to my daughter when she is in college come August! What a great surprise they will be! I so dread her leaving...I will be lost!

Thanks for the recipe. My Granddaughter is staying with me today, and she just loves lemond cookies.So today is a good day to teach her how to bake lemond cookies.
