What goes in your meatloaf?

I don't think I have ever seen 2 meatloafs made exactly the same. I am just curious to know how all the great cooks on Mylot make their special meatloaf. I use crushed saltine crackers, onion soup mix, and a little ketchup in mine, along with the traditional hamburger, eggs, etc. Some people use other ground meats along with the hamburger, or completely as a substitute for the ground beef. I have tried ground turkey, but I don't care for the texture-it seems more mushy and to not set as well. So tell me, what goes in yours?

When I do indulge in gound round beef and meatloaf is an all-time favorite to be creative with, I go all out. My favorite though is using: soaked in organic milk small crusts of white bread, 1 egg yolk, 3cloves finely chopped garlic, some cubes of velveeta, sliced mushrooms. Mix altogether and form in loaf and then halfway through baking I put cream of mushroom soup all over it ! Served with fresh sourdough baked bread. sharing the light, Erica aka 'enlightenedpsych2'

I bet the garlic is delicious. I have never had a cheesy meatloaf before. Does it end up tasting similar to a mushroom melt burger?

I call my meatloaf~ refrigerator door meatloaf. I usually put in breadcrumbs, eggs, parm cheese, basil, garlic, a tiny bit of mustard, ranch dressing, and lots of ketchup. I just saw Martha Stewart making a meatloaf and she said the more ketchup the better. I have made it with ground turkey but then i have to add extra breadcrumbs so it isn't so mushy. I have one in the freezer right now that i used stuffing instead of breadcrumbs....we'll see how it is.

for me The meatloaf also includes bread crumbs, egg, onions, parsley and yogurt as well as various spices. We bake the meatloaf on a cookie sheet, instead of in a loaf pan. One tip: if you don’t like semi-crunchy onions in your loaf, you can pre-cook them in a skillet. Just keep cooking the onions with a bit of oil and keep adding water until the onions are soft. Then drain, cool and add it to the meatloaf mixture.

Hmmm..adding yogurt is a new ingredient mentioned by anyone! Thank you for the onion tip. I bet they add a good flavor anyway being suateed first. Even sauteeing them in garlic would add some nice flavor too.

I'm still experimenting with meatloaf and am always trying different stuff. I actually made one last week where I sauteed garlic and diced red pepper and added that, along with egg, bread crumbs, basil, parm cheese, worchestershire sauce, balsamic vinegar, and then covered the top with marinara sauce. It was actually pretty good.

It sounds like it would be very good. I have made my meatloaf pretty much the same for the last few years. I may have to change it up though, because I am getting some great ideas from everyone! Like in yours, the basil and parmesan cheese must taste great.

I have recently been discovering that fresh basil is really delicious and adds a great flavor to a lot of things. I've been adding it to sauces, the meatloaf, you can make pasta with chopped plum tomatoes, basil and mozz cheese, YUM. You can even mix it with eggs. Yeah, I might be going a little overboard with basil. But it's just so GOOD.

I go pretty basic with mine. It's usually just hamburger with an egg and some french onion soup mix and then with about 15 minutes left to cook I'll spread some BBQ sauce over the top....oh, and occassionally a little ground pepper, but thats it.

Yours is pretty simple, as is mine. (As I described above.) Nothing wrong with that! But if you are looking for some different ideas, read through what the writers have posted. There are some wonderful ideas!

I hadn't really thought about it but you're so right, every meatloaf is different. Even the ones I make. I do have a somewhat standard with variations based on what's around and who's eating it. I add saltines or breadcrumbs, ketchup, onion (fresh or diced spice), mustard (jar or powder) and relish. Sometimes there will be an addition of oats, egg or milk. I don't find it needs a lot of spicing due to the ketchup, mustard and relish. The most different thing I do is to make it in muffin tins rather than a loaf. I started doing this years ago in the microwave as it was so quick and the kids thought it was a personal loaf for them. The things us Mom's will do to get out kids to eat! :) Now it's convenient with just myself and hubby cause I can make a batch and easily freeze any leftovers for another day.

I bet that would be fun for kids-the little personal meatloaves instead of a traditional slice. The way you put yours together is very unique! Does it taste somewhat like a burger?

LOL well just of what you said goes into it just reminded me of how I deck out my burgers. another write had said she adds Velevetta cheese to hers. I bet adding the chesse to your recipe would definitely make it taste like a burger (with cheese of course.)

Perhaps to some it might taste like a burger because of the ingredients I add. Funny thing is I don't add ketchup or relish to my burgers so it doesn't taste like a burger to me.

I had just made a meatloaf last week, and added boxed herb stuffing, and it turned out great! I would have never thought of that had I not started this thread!

I make it with ground sirlion not that turkey stuff I put 1 egg salt and pepper a chopped onion chopped pepper some milk that makes it moist and some parmeasean cheese bake it 350 for 1 hour and on top of meatloaf I spread ketchup mixed with a little honey while its cooking.

That is very interesting...honey mixed with ketchup. Doe it give a barbecue sauce taste to it? Mmmm....I love parmesan. I bet that would be good. About how much do you put in?

Bread crumbs, eggs, ketchup, onions (I like to but normally my kids won't eat it if I do), garlic, and I guess that's about it. I love meatloaf. Funny how people regard it cause it is one of my favorites.

My kids don't like onions either, but they usually aren't so picky if they are cooked in with something. Maybe you can try the onion soup mix if your kids are finicky. It gives a great flavor but they don't look like onions. So they will be disguised. :)

meatloaf from lean or 80/20 ground pork with egg , bread crumbs , chopped garlic and onions. i can like it on grill or sometimes baked with cheese and pimiento . this is so great with a cup of rice and side dish of cucumber pickles . have catsup or lite ranch as dip and hot sauce ! or you may want to make it into a hamburger with bread , lettuce , tomatoes , white onions and american single cheese or pepper jack !

Sounds very delicious! Leftover meatloaf sandwiches are very good. If we don't end up eating the rest for a leftover night, I enjoy the sandwiches as well.

Well since I have to cook for my family -- I can't experiment alot, so I use my Mom's recipe. Some ground beef, an egg, a slice of torn up bread -- or crumbs if we have them, a splash of milk, a TON of garlic and even more parsley ^_^ we can't get enough of the stuff usually.

Okay, here's my household's favorite meatloaf. I use hamburger, breadcrumbs, onions, garlic, celery, oregano, rosemary, salt, pepper and small amounts of relish, ketchup, and milk. I cover my counter with aluminum foil and flatten the hamburger mix out to about 1/2 inch. I take 3 or 4 slices of sliced ham and put it down the center of the meat. I cover it with grated cheese. Then (using the aluminum foil to make things easier and neater. I roll it all up into the meatloaf form and make sure to mush together my seams and the ends so that it's all one big meatloaf. Then I just bake as normal. About 10-15 mins before it's done, I mix in a small bowl some ketchup, soya sauce, brown sugar and pour it over the meatloaf. I usually serve this with rice and some sort of vegetables on the side. My kids love it!

I'm not a fan of meatloaf at all, but it's just such an easy meal to make that sometimes? It's hard to refuse! So I've done a lot of experimenting. For a plain, generic sort of meatloaf, I like to use a combination of ground beef (Whatever's on sale at the time, but ground round or chuck are always good. Sirloin, I think, leaves it a little bit dryer and more crumbly, so I usually compensate by adding liquid), ground veal, and ground lamb. Then I use one egg, a chopped onion, and seasoned breadcrumbs. Before I put it in a loaf pan, I crumple up some aluminum foil into a long snake and wind it back and forth along the bottom of the pan. Then I lay out a piece of cheesecloth over that and form the loaf into that, leaving enough cloth overhanging the edge just enough that it's grasp-able. I top it with barbecue sauce, and bake at 350F for an hour. The foil/cheesecloth allows the fat to drip away like it would on a grill or broiler pan so that it's a little bit lower in fat, since it's not just sitting and cooking in it. It also keeps it dryer, so it's less mushy. If you're out of cheesecloth or can't find it for whatever reason, you can use another sheet of foil and poke holes in it. It's not AS effective, but it still works. A few of my favorite experiments have been: Cheeseburger Meatloaf I stick to purely ground beef with this one, and in this case I like to combine sirloin and regular old hamburger. Depending on what I have on hand I'll either use onion soup mix or chop an onion and mix that in. A small can of diced tomatoes, with a small amount of the liquid, chopped dill pickles (relish works well too, so long as it's not SWEET relish), plain breadcrumbs from stale hamburger buns, and instead of an egg I'll use a 1/4cup of mayonnaise. I use the same trick with the foil and cheesecloth, but I'll only put half of the mixture in. Then I'll put down a layer of thinly sliced American cheese, or Velveeta slices, and then put the rest of the mixture down. I top it with ketchup and mustard, and serve it on a lettuce bed. It looks cute and it ties it together, because I like my burgers fully dressed. LOL! Thanksgiving Leftovers Loaf This one really is a full balanced meal in a slice. I use leftover turkey and either shred it with a fork or toss it in the food processor and let that rip it to bits. I combine that with a pound of bulk sausage (I like spicy sausage, but whatever you'd use for your turkey stuffing is what I'd recommend.) and if I need it, ground beef. (It all depends on how much of the meat is still stuck to the carcass!) To that I add the typical leftover fare - some green bean casserole, whipped sweet potatoes, corn, mashed potatoes... whatever's left by the time I make it. For the breadcrumbs, I crush up what's left of the dry stuffing I used (I always have more of the dry stuffing than I need!) and if it looks like it needs an egg, I'll throw one in. If I have gravy left, that gets poured on top and if I don't, cream of mushroom soup works nicely. I keep wanting to try it with cranberry relish, but it never lasts long enough. This is a great way to use up leftovers the week or so after the holiday is over, so that you don't have to worry about them going bad. Pesach Loaf Well, okay. This is still just your basic meatloaf, only it's kosher for Passover. Which means instead of breadcrumbs, you use Matzoh Meal or farfel, and you make sure the ingredients are all kosher. Kosher meat, kosher sauce (barbecue or ketchup, preferrably), egg doesn't have any blood spots. To this one, given the bland nature of matzoh, I like to add spices. Usually garlic, parsley, a small bit of basil, and red pepper, an onion, and maybe some paprika. It serves nicely with applesauce or tzimmes, and a salad with a vinaigrette dressing. Shredded carrots and red or yellow bell pepper work nicely in it, too. I have other ideas that I'd like to explore sometime. An Italian meatloaf and a Southwestern Chili loaf, for starters, but so far I haven't. But now you've got me craving a meatloaf, and Passover's right around the corner!

I use pork sausagemeat to make meatloaf and put in plenty of leeks and sometimes (for variety) apple or sundried tomatoes. I never seem to have anything suitable for making breadcrumbs so I've found that using a little strong white flour works as well. I flavour with mixed herbs and plenty of paprika, black and red pepper (this means you can use hardly any salt).

I have had meatloaf with half hamburger and half pork sausage before. I remember it being quite good. I bet add sun-dried tomatoes are good. A good hint to a different twist-thanks :)

I pretty much make it different each time I make it! Ha! I start with a pound of extra-lean hamburger. I add one egg white and a half of a medium onino diced very fine. I add some diced green pepper if I have it on hand. I shred a carrot into the mixture. I add garlic powder, salt, pepper and about a cup of oatmeal. I then add 3 tablespoons of worchestire sauce and enough ketchup to hold together. (on some occssions I use barb-b-que sauce instead!) Sometimes I bake it as a loaf while others I bake it in muffin tins. (so easy to freeze the muffins that are left over!) During the last 10 minutes of cooking I spread some ketchup on top (or barb-b-que sauce if that was what was used in the mixture). I always make two meatloafs (or muffins)...one for that night's dinner and one to freeze.

Lots of readers have responded back stating they add chopped and grated vegetables to theirs too. Other than fresh onions, which I rarely use anymore because of the onion soup mix, I have never tried adding veggies! It sounds good, and I am sure the way they cook into it, the flavor is mild, but moreso, the added fiber and vitamins are a great plus to the nutrition! Thanks so much :)

LOL, this topic has got many thinkingof making a good meatloaf for dinner soon. I know I will be making it soon, probably at the first of next week, as I all ready have enough leftovers in my fridge to eat up on for the next for suppers.

Oh I love meatloaf!! I am making tonight for dinner. In my meatload I put in italian style bread crumbs, seasoned salt, garlic powder, onion powder, 1 egg. I mix it all together with the ground beef and put it in a loaf pan. Before I put it in the oven I drizzle ketchup over the top of it. Now my husband, he grew up eating meatloaf with raisins in it! Yick! But if I have some raisins in the house, I will do 1/4 of the meatloaf with raisins for him.

I bet the Italian style breadcrumbs would add some good flavor, but do you find you have to add a lot more because the crumbs are so fine? If you like using seasoned bread crumbs, you may be interested in what a few others have mentioned putting in theirs...dry stuffing mix. The next time I make a meat loaf, I am going to try adding alittle seasones, qucik box of stuffing, like Stove Top instead of my regular saltines. That just sounds too good to pass up!
