I love avocados and just bought quite a few on sale. I was wondering if anyone has some good recipes using avocados, besides guacamole? Don't get me wrong I love guacamole, but I already have tons of recipes for it. Any help would be greatly appreciated!

I love avocado sandwiches. I use white bread, mayonnaise and a little salt. One avocado will make two sandwiches, so that's what I usually have.

When you say mayon do you mean mayo or miracle whip? I have noticed a lot of people on mylot consider miracle whip mayo, I don't. I'm not a big fan of miracle whip. Thank you for the sandwich idea.

I like them sliced up in meatloaf sandwiches. I also like them in sushi - avocado rolls.

I love avocados ! :) They are delicious sliced and added to sandwiches (BLT's are my favorite to add avocado to) Also great in salads or shrimp cocktail. I love to eat them just plain too, with just the smallest sprinkle of salt. You might check out www.allrecipes.com and see what you can find there, Good luck with them ! :)

i love avocado and what you can do is make some smoothie. Try this one, you might love it too. AVOCADO BANANA BERRY SMOOTHIE Half a ripe avocado 1 to 1 1/2 frozen bananas 4 to 5 frozen or fresh strawberries Splash non-fat soy or other nut milk Pinch cardamom seed Pinch allspice Whatever else strikes your fancy. . . Nuts, fruits, spices, etc throw all ingredients into a blender and blend until desired texture is reached. I prefer it smooth, but some like a chewable drink. Very, very delicious! Serves: 1

I love the darn things and I'll let them get so ripe that they practically squirt out of their skins! LOL! They are wonderfully healthy for dogs and cats, but I'll assume that you want recipes for human consumption, so here you are: http://www.cs.cmu.edu/~mjw/recipes/vegetables/avocado-coll.html There's a whole bunch of 'em! :) Enjoy! :)

I like to either mush one up and spread it on saltines for a quick and yummy lunch, or make a seafood salad. For the salad I cut the avocado in half and remove the pit. Then I mix up some seafood (either frozen salad shrimp or even that substitute crab meat stuff) with whatever else sounds good like mayo, nuts, onions, seasonings, etc and stuff the avocado halves with this mixture.

I love avacados too! And what a great find to get them on sale. The are often a bit pricey where I live. The food network website (www.foodnetwork.com) has a bunch of avacado related recipes...and while there are a few guacamole ones, there are many others, and also some good ideas for other places to use avacados in your meals. For example, Sandra Lee suggests adding them to a blue cheese bacon burger. That sounds pretty good to me. My favorite local burger place makes a burger with avacado in fact, and that's the one I always get!
