I love to make that and i love to make egg sandwiches. i feel they are very easy and fast to make and serve when you are in a hurry to move out. one day my brother came with 2 of his friends without telling me and he said that they will be having breakfast. our breakfast was over but i was having eggs. instead of serving an omlette i served this . i hope you'll like it.
8 eggs
1/2 cup mayonnaise
1 tsp ground black pepper
1/4 tsp paparika
2 tbsp chopped pimento - stuffed green olives
you can also use mushrooms.
place eggs in a medium saucepan with enough cold water to cover and bring to a boil.cover saucepan, remove from heat and let eggs stand in hot water for 10-12 minutes.after that remove from water , cool it and peel it . then chop it also. take a large bowl . mix this chopped egg mixture in it with the mayo, salt, pepper and paprika. you can mash all this with a fork until you feel it is smooth. then gently stir in the olives .refrigerate until serving. i used mushrooms too because my olives ended. i fried them in butter after chopping them first. so i made some of olives and some of mushrooms. it is really a fast thing to make and serve when someone uninvited guest drops in and you have to serve something.

I haven't made egg salad in a long time. The way I make it is, I chop up hard boiled eggs, place them in a bowl. Add some low fat mayo and mix well. Then I add some pepper and mix again. That's it, nice and simple.

Of course the chopped boiled eggs, a little bit of finely minced pickles, salt and pepper, a dash of nutmeg, a bit of onion (either yellow, red, or shallots, whichever I have on hand) for a total of about 1 teaspoon per egg, and sour cream, mayo, or plain yogurt to mix it all up with. For a special twist, sometimes I add a teaspoon or two of capers (can substitute the pickles). They give a really great flavor to eggs! I also use them when I make devilled eggs.

I chop up my boiled eggs,then I add alittle chopped onion. Then I mix in alittle mayo and mustard. I add alittle dill pickle juice too but dont tell my husband. I addsalt and pepper and thats it.

2 boiled eggs chopped
1/2 cup chickweed, chives, or whatever wild food chops-
up tiny well (like chives and chickweed chop up
into small pieces well)
Mayo
Anything else you want to put in it.
Chop up everything-except the mayo- and put it into a bowl. Fold in the mayonnaise. Only stir until all the ingredients are wet. Don't deflate it.
Also you can add lettuce or lamb's quarters and put between 2 slices of bread if you want.
