Raising your own food can save alot on the budget and is much tastier then veggies and fruits from the stores. As you know we have plenty of rhubarb in our garden. We have it from spring until it frosts in the fall as long as we keep it cut off and used. I have added a photo of some fresh cut rhubarb from our garden. I have been thinking of ways to prepare it so we don’t have to get too bored with it. I have posted a couple of my rhubarb recipes and I thought it was time to share one more for you to enjoy. This is a wonderful rhubarb crisp crunch. It adds the crunch to the crisp in a new way. It is so easy to make and used ingredients that you probably already have in your pantry. It is just wonderful and can be topped with ice cream if you desire. My grandmother used to make this and I just love any kind of crisp. Rhubarb Crisp Crunch 1 cup brown sugar 3/4 cup oats 1 cup all purpose flour 1/2 cup melted butter 1 tsp vanilla 4 cups thinly sliced rhubarb 1 cup sugar 1/2 cup water 2 TBSP cornstarch Combine brown sugar, flour, oatmeal, and melted butter. Press about 1/2 of the mixture on the bottom of an 8" or 9" square pan. Reserve the rest. In a large saucepan, combine rhubarb, sugar, water and cornstarch; cook until clear. Add vanilla. Pour rhubarb mixture over crust. Cover with remaining crunch(oatmeal, flour, brown sugar, melted butter mixture that you reserved). Bake at 350 for 40 - 45 minutes. Cool. It is great topped with vanilla ice cream and some extra crunch mixture. Yummy. Now wasn’t that simple to make and rhubarb is just the perfect ingredient to make it wonderful. This sounds delicious, villageanne! My mom used to grow rhubarb and pass it on to my grandmother who was the family pie maker. She made such awesome rhubarb or rhubarb-strawberry pies. But, as much as I loved them, I never really learned to cook with rhubarb myself. This seems like such a simple recipe! I'll have to check at the farmer's market and see about getting some to try it. I have posted more rhubarb recipes that are easy and taste great. Including a rhubarb dumpling that is made in the microwave. Rhubarb cake that tastes like old fashioned custard layer on it. Yummy.

Oh I'm going to look those up now, thank you!!! The rhubarb cake you mentioned reminds me of something else... in my grandmother's rhubarb pie, the filling was somewhat like a custard, as well, and I think that's why I loved it so much. I've had others where the filling was pretty runny... disappointing :(

Oh I really want to try this , I have only ever tried apple crisp and love this but rhubarb would add a new taste . We just bought a house and we are moving in next week and this is something that my husband and I have talked about doing , was starting a little garden of our own . Not sure how well I am going to be able to do this because I have never had a garden and am not sure I am going to know what is the plant and what is a weed but hoping I can learn . It will save a lot of money and we can plant what we like so we know there will be no waste . My father in law has a rhubarb patch and the only reason they have it is because years ago we the place we used to live at had rhubarb and we were the only one's that ate it but they had said they would like to try it and had come up and got a piece from ours ( not sure how they did this ) and planted their own rhubarb patch . Over the years they have had it just for us because they don't actually care for the taste more then once a year . So my father in law was saying that I could take a piece from his and we would be able to plant our own again as this would be our home and we have a lot of land so a little garden and a rhubarb patch would be nice and I would like to plant some strawberries and have an apple and cherry tree as well . I am actually excited about trying all of this and seeing if I can do this myself . Thanks for the recipe idea as I am going to save this and give it a try . I love Rhubarb but I can not grow my own garden here where i live , cause I rent and no one can grow anything here ... If I ever find any I`ll try your recipe , I`m sure I`ll love it ... Thanx ...

My husband,son, and granddaughter all like rhubarb. I made 6 pies in the last week.But I never tryed the rhubarb crisp. I dont grow my own rhubarb, but a friend of ours does and we can have what we want. Do you have any other recipes with rhubarb? I also was wondering if you have a different way of making your pies. I have only one recipe on making pies.

I don't care for rhubarb myself but have some friends that grow it - I was taking care of their garden for them a few weeks ago while they were out of town. One of my 'jobs' was to pick the asparagus and rhubarb and use them. I loved the asparagus but gave the rhubarb away :) I will pass this recipe on to them.

Rubarb has a little sour but it turns out very good when you add some sugar and apples. I have never made rhubarb crisp,it sounds so delicious to me.I will definitely want to try your wonderful rhubarb crisp . Thanks for the recipe..:)

I was looking for a recipe for Rhubarb crisp this weekend. I wanted to make a strawberry-rhubarb crisp instead of making a pie. I ended up making pie. I have some rhubarb left over and will use it to make this recipe. Have you tried adding strawberries to it?

Seeing all your recipes for rhubarb- makes me wish that we didn’t dig out most of the patches of rhubarb we had growing- We aren’t rhubarb eaters- But then again I didn’t know of any recipes- I got sick of it raw- It always gave me a stomach ache from eating too much raw rhubarb- We dug out a lot of it and gave it away- this one looks good too- but not quite as good as the strawberry/rhubarb pie! Thanks for sharing!

I love rhubarb! Rhubarb pie, rhubarb compote.. I love it all lol. I have to try that recipe. We just moved to a place where I can grow my own garden, but it might be too late this year, but hopefully next year I can grow some nice crops and rhubarb is definetely on the list.
