Its because it the other love stories don't stray away from the very pattern and Shakespeare has made in this play where conflict makes everything interesting. The only difference would be the ending since Romeo and Juliet is a tragedy.
Lovers meet, get developed yet realize their love to be difficult since certain situations prohibit their relationship to progress, they part ways for a period of time while one of them, if not both, goes through a developed sense of growth after going through depression to realization, now it depends if they'd live happily ever after or serve as a lesson to establish peace among those who influenced the relationship to be prohibited.
