I have never made these from scratch. Not sure that I would make them for me and the old grump. I try to watch my fat intake. Years ago I would have loved to have the recipe for this so I could make them for my brood.

I knew that would get you..fingers meaning the edges of the grated potato, that stick out, but aren't finely grated and not mushy like mashed potatoes..like a fringe..my husband is explaining it to me...you fry them until they are golden brown...

Goodness, that takes me back to some wonderful memories! My mom used to make potato pancakes, mashed and grated. It always marked the morning as special, somehow. She was a wonderful cook and did many things from scratch but, I guess because they were so rare, her potato pancakes stand out as one very warm and fuzzy memory. I've never tried to make them myself - she set a very high standard! Applesauce or blueberry preserves, were how she served them up. Thanks, Feona, for a great flashback!
