Egg noodle recipes

Does anyone make homemade noodles? If you do, what recipe do you use? I use one that takes a lot of eggs, but with the price of eggs, I'd like to find one that's cheaper to make and still tastes good.

Hi peavey, I haven't made egg noodles before, but would like to try. Some egg noodle recipes have been posted in response to your question, but it would also be nice to see your recipes as well. Can you provide your uber-egg noodle recipe here?

Sure... 3 1/2 cups flour 1 tbs vegetable oil 6 medium or 5 large eggs 1 tsp salt Best eggs with oil and salt, pour into flour, mixing with fingers a little at a time. Knead until smooth and elastic, then cover with a damp cloth and let it rest for 30 minutes. Roll thinly on floured board and cut into narrow noodles. These are best fresh, but they can be dried.

Hi Peavey, Thanks for your recipe. The "best eggs" typo reminded me of a thing the supermarkets do (don't know why) - so many of the egg cartons have "fresh laid eggs" written on them (how else do the chooks lay them?). Anyway, is that all there is to making egg noodles? It sounds suspiciously simple - TOO simple, there must be more to it, surely? And just out of curiosity, how do they get the twists into the store-bought pasta noodles?

I have tried to make a homemade egg noodle and it turn out very nice in taste. I just used one egg in the making with some turmeric powder to color and taste the noodle. Turmeric can help to give a taste to the noodle and reduce the unpleasant smell of noodle when they are cooked. I don't have the noodle machine so I just cut them in very thin strips. For this one, my dough must be a bit hard so that when you boil the noodle, it wouldn't be too much soft.

Good idea, thank you. That reminds me of when I was selling fresh eggs from my chickens. One woman bought them to make egg noodles for something for her church, but they turned out "too yellow"! Free range egg yolks are much brighter in appearance and she wasn't used to it.

http://allrecipes.com/Recipe/Egg-Noodles/Detail.aspx This recipe only calls for 2 eggs and has gotten good reviews. I have this one saved for when I get brave enough to try making my own noodles.
