I have a pork roast in the oven for dinner tonight

I am not sure yet what I am going to serve with it. It was on sale for 99 cents a pound at the grocery store, so I picked one up. It is over 4 pounds so we are going to have plenty leftover for another meal. Do you eat roasts often? What so you serve with yours? What do you make with the leftovers?

I am so jealous, pork is my favourite meat ever, and I cannot eat it as it gives me a bad tum and makes me feel ill. It is not fair!! I cannot give you any ideas of what to make with the leftovers as there is never enough leftover when we have had it to make anything from it!! I did used to make cold pork and apple sauce sandwiches though, they were so nice.

I have never had pork with apple sauce. Sorry to hear that pork upsets your tummy. I might try that.

I make a roast a couple of times per month, sometimes pork, sometimes beef or turkey. I usually make it with potatos, carrots, garlic, onion and cabbage roasted along with the meat. I love the leftovers! I make sandwiches, or soup, or sometimes will cut up leftover potatos and fry them, then add the leftover meat.

I like the cut up leftover potato idea. I will have to try that next time I make a roast and throw in some veggies. YUM!

OH, I love Pork roast! I actually just had it three nights ago. I would serve green beans with it, as well as some rice. Thats what we did the other night, although mashed potatoes are always good with any roast!

We have green beans here quite often, so I was trying to steer clear of them for a night. I agree with mashed potatoes going well.
