My 14 year old daughter has Celiac Disease. Gluten free products cost alot. I did buy a breadmaker and make her gluten free bread but does anyone have any frugal hints for people that can't have gluten. She especially misses pizza. I do try to make a gluten free pizza for her but it doesn't compare to the pizza places. Does anyone have any good hints on gluten free cooking that is frugal too.

I don't buy bread anymore, I make a batch of these dehydrater crackers everyweek and use these instead of crackers and bread - ingredients -
sunflower seeds
linseeds/flax seeds
pinch of salt
herbs de provence or any other herbs/seasonings

I soak the sunflower seeds overnight (I may even sprout them a little bit for more healthy enzymes)
Soak the flax seeds for at leas 3o mins or overnight.

Process or homogonise the seeds up and make a sort of a dough/batter with them add the salt and the herbs and mix it all up then I lay it out in my dehydrator trays. When it nearly dries on one side you can "score" it into shapes - or just break it up when it dries. You turn them over to dry on the other side after half dry.

A website has a similar one to this, but he uses almond pulp instead of sunflower seeds - that's where I got this idea, but sunflower seeds are much cheaper and they have lots of antioxidants.

My pleasure Virgie

I am not ceoliac but think I do get bloating etc from bread and have problems with yeasts, so these are great for me. The other thing I like about them is they have simple healthy ingredients. Sometimes when I read the side of a packet of a gluten free product the ingredients can sound a bit scary as they don't always sound that natural!

and p.s. - my family also like them and I have taken them to work for a morning tea and even some of the people who don't really like healthy food liked them.

I don't know how this will taste but it's worth a try. You can make your own rice and bean flour too if you have a food processor or a blender.

Pizza Pockets
Nice tender crust with a yummy filling.
Ingredients:
2 eggs, beaten
1 1/2 cups rice flour
1 cup cold water
1 cup cornstarch
1 cup bean flour
1/2 cup potato starch
1 tbsp xanthan gum
1 tbsp vinegar
2 tsp baking powder
2 tsp salt
Pizza topping favorites - pizza sauce, cooked ground beef, parmesan cheese, chopped peppers, mushrooms, chopped onions, etc.
Directions:
Thoroughly mix the rice flour, cornstarch, bean flour, potato starch, xanthan gum, baking powder and salt.
Make well in center and add cold water, eggs and vinegar. Mix it well.
Begin kneading and continue for about 5 minutes. Set aside for 30 minutes to 1 hour. Roll the dough to a very thin sheet.
Cut these into 3 to 4 inch squares. Stuff them with 1/2 tsp pizza sauce and your toppings. Pinch edges closed and deep fry until lightly browned.

Hello! I'm a poor college student who has Celiac Disease, so I can empathize, haha. Rice-based means are relatively easy to cook and yummy - try homemade fried rice or a homemade spanish rice with lots of yummy tomato sauce. I can't copy and paste the recipes here because of the no-copy/paste policy here, but if you look around online, I'm sure you'll find recipes. As far as premade food, Chef Boyarde sells single serving Rice with Chicken and Vegetables, which are really good and cheap. There are also "A Taste Of Thai" instant rice noodle kits which are cheap and delicious. They have peanut satay and pad thai flavors and are 100% gluten free.

Unfortunately, one of the difficult truths of Celiac Disease is that the cheapest things in the store usually have wheat in them. Wheat is relatively inexpensive to grow, and in the US we like to put it in everything, apparently!!!

My son is 9 and has Celiac's. He is a pizza fan too! We have gotten pretty creative. You can take about 2 cups of hashbrown potatoes and mix in 1 egg and 1/4 cup parmesan. spread on a pizza pan and bake until lightly brown. Then add all the pizza toppings and sauce. (BTW Walmart Pizza quick sauce if gluten free and wonderful!) We also like to take left over rice pasta, mix in an egg and some cheese and use that as crust. Either way its wonderful and a nice way to use leftovers!
