Soft or firm pasta?

When you prepare your pasta whether it be spaghetti or some other kind of pasta do you like to let it boil for a while or would you rather have the spaghetti with a more firm taste?
I think that the pasta never tastes that good when it is overcooked.

When I was a young girl, we didn't have lots of money. My mother would cook pasta so long that the noodles would expand to look like more food. It was so gross that the noodles would fall apart in my mouth without biting them. Now a days I like my pasta cooked enough to be able to chew them, but not overcooked. It gives a bit of chew which I like. I think overcooked noodles are not the texture I like. My children though seem to like over cooked noodles and sometimes say that I didn't cook the pasta long enough. LOL

I don't like it mushy and overcooked, but I don't like it super firm either. I usually cook it the required time but turn off the burner 2 minutes before the timer goes off. It save me electricity and the pasta gets cooked perfectly.

As always pasta should always be firm. But there is a technique for that if you want if firm. I always like spaghetti and carbonara and i prepare it every once a week for my hubby.
I do boil my pasta as per instruction given in the package. Then i will wash it off with cold water so that the taste of the pasta, which is a flour taste will be lessened and the pasta will taste and smell better.
All the time i use to cook pasta, i have never encountered that i over cooked it, maybe its because you can see the strands very easily to determine if it's rightly done. You will never go wrong with pasta as long as you select a 100% semolina flour.

I prefer firmer pasta. If it's over-cooked, it can turn mushy, disgusting. I also add a little margerine or butter after it's drained so the noodles don't stick together. It's hard watching my carb intake...I haven't given up pasta, I like it too much :)
