Light summer meals

I am looking to find some new ideas for some light summer meals that I can make for my family. My husband is a meat and potatoes type of guy and will eat salad but not as a meal. It is almost 100 degrees and we don't have air conditioning so I need to come up with some light meals that I won't have to spend all day in the kitchen.

How about some tacos? all you would have to do is fry up some ground beef. You could allso have taco salad too. You would get your meats and vegetables with it. It would be fairly quiok for you to fix also.

Since I am trying to lose weight, I always have light lunches! I vary between using my George Foreman Grill (a great time saver, plus it's much healthier!), and canned "salads" like tuna salad or chicken salad. I love making lettuce salads, adding things like toasted pecans, different kinds of cheeses and adding maybe some taco meat to almost make it a taco salad (without all the fat). My husband's a Texan, so I understand when you say your husband is a meat and potatoes guy .... mine too! Maybe try making a large pan of tamales, then just re-heat 2-3 of them in the microwave for each serving, with some fresh fruit on the side!
