i am currently on a vegetable diet trying to convert myself from a meat lover to a vegetarian. i have no problems eating vegetables, but i do not have a lot of ideas on how to cook or prepare them.

can anyone help me or give me some tips on how to prepare vegetable meals?

i tried buying cook books for vegetables but i had more problem understanding the terms they use than the cooking procedure.

i want to know the cooking techniques from first hand experience.

Here is a recipe for aspargus almondine, hope you enjoy it:

1 can cream chicken soup
1/4 c. milk
3 hard boiled eggs, sliced 1/8 inch
1 c. cheddar or colby cheese
1 pkg. frozen cut asparagus, prepared
1 c. sliced almonds
1/2 c. bread crumbs
2 tbsp. butter

Combine milk and soup. Stir in eggs, cheese, and asparagus; pout mixture in buttered casserole. Cover top with almonds and bread crumbs. Dot with butter. Bake at 350 degrees for 30-40 minutes.

Well, it is really easy to prepare vegetables. You can steam them, meaning you either have a steaming basket or put a little water in the bottom of a pot set your vegetables in the pot and slowly bring the water to the point where the steam cooks the vegetables. You can also microwave them. I do that a lot, just be careful not to overcook them. When they are done rinse them under cold water to prevent further cooking. You can also stir fry them. Heat the oil in a wok or deep frying pan. Swish the veggies around until barely done, pour your sauce over them and cook a couple of minutes more. You can also stuff some vegetables such as tomatoes, eggplant and zucchini and bake them in the oven. Stuffing can consist of pine nuts, walnuts, herbs, breadcrumbs and cheese. Then there are vegetable stews.
The important fact to know about vegtarian cuisine is to make balanced meals instead of just boiling up a few vegetables.
These are some of my favourite vegetarian dishes:
sweet potato and coconut soup
Squash soup
Lentil and spinach soup
Powerful kale soup
baked beans
spaghetty squash with tomato and ground tofu sauce
eggplant lasagna
stuffed tomatoes
fried egplant cutlets with egg and panko breadcrumb breading
eggplant mousaka
brown rice and black beans
cauliflower and lentil stew
chickpea and raw veggie salad
vegetarian chili
minestroni soup

oh, thank you for the input. i usually stir fry my vegetable but i will definitely try steaming them. microwave? hmmm...i might as well try it...

Microwave isn't a good idea as all the vitamins are killed.

I try to be a complete vegetarian but ever so often I do eat meat, chicken beef or fish not pork. If I am invited to dinner or course I have to be polite and eat what is set before me.
Here are two of my favourite recipes
Salad nicoise
2 cups cooked green beans cut into 2 inch lenghts
6 small new potatoes, cooked and sliced
1 small red bell pepper, cut into strips
1 small red onion thinly sliced
2 cups sliced celery
3/4 cup sliced black olives
3 hard boiled eggs, quartered
4 tomatoes cut in wedges
Lettuce leaves torn into bite size pieces
Garlic Dressing:
2 cloves garlic crushed
2 tsp. Dijon mustard
1/4 cup fresh lemon juice
1/4 cup olive oil
1/4 cup vegetable broth or boiled water
1/8 tsp sugar
Salt and pepper


1.In small bowl wisk together dressing ingredients, set aside
2. In large bowl combine all other ingredients except lettuce, eggs and tomatoes
3. Pour dressing over salad, mix gently
4. Line large salad bowl with lettuce, spoon salad over it
5. Garnish with egg quarters and tomatoes

This serves a crowd. You can also provide a bowl of cooked chicken strips or tuna chunks for those who want meat to top their salad. This dish is great for a party.

Eggplant Gratin

1 large eggplant about 2 lbs
3 tbsp. olive oil
2 cloves garlic chopped
1 lb plum tomatoes, seeded and diced
1/4 cup chopped parsley or cilantro
Salt and pepper
1 tbs. all purpose flour
1/2 cup milk
1 cup grated low fat cheese such as mozzarella

1. preheat oven to 400F (200C)
2. Cut eggplant lenghtwise in half. Oil cut sideds with 1 tbsp. olive oil and place cut side on baking sheet. Bake 40 min. or until soft. Cool and scrape eggplant from its shell into a bowl and break pulp up slightly with knife.
3. Heat remaining oil in frying pan. Add garlic and tomatoes and sautê (cook gently) for 2 minutes or until tomatoes soften. Stir in egplant pulp and parsley and cook 2 min or until flavours are combined. Season with slat and pepper. Stir in flour to thicken,cook 1 min. Add milk and bring to boil.
4. reduce oven heat to 375F (190C) Place eggplant mixtures into 4 individual oiled oven proof dishes or one large oven proof dish, top with sheese and bake for 20 to 25 min, until cheese is browned.

I use the microwave to cook, cauliflower, green beans or broccoli. As I mentioned you need to adjust the cooking time to the desired degree of tenderness that you like and then immediately plunge the veggies in cold water, drain and season to prevent further cooking. You get evenly cooked perfect florets or beans.

Lots of good suggestions posted for you. My favorite way to eat veggies is to brush them with a little bit of olive oil and to grill them. I particularly like this method of cooking with zucchini, mushrooms and carrots. Have you tried Gardenburgers or soy protein burgers? I also like smoked and baked tofu (available here at Trader Joe's and you can probably find it in health food stores). I don;t have the recipe handy but do a search for layered chili. Yummy. When we fix hamburger helper menu we put vegetables in instead of meat. We put vegetable into spaghetti instead of meat. THere are a lot of meat substitutes but they should be used sparely as they have a lot of fat in them.

you are right lotterylover...there are a lot of subtitutes for meat...i was just browsing the net for a recipe for dinner and i stumbled to a recipe for grilled eggplant with garlic sauce...went to the market and shopped for the ingredients...

I love eggplant no matter what way you fix it. Eggplant and cheese is good with tomatoes on top. A pizza sauce might be good with it although I have never tried that.

hi penggoy well for me I just use very little water and stick my veggies in my microwave when I still had an apartment.Also if I cooked them on the stove I used very little water and just cooked til tender crisp. Do not overcook as you lose precious vitamins that way.Also you can google for a zillion ways to cook
vegetables too.

There are so many lovely foods you can make using only vegetables. I often think vegetarians eat more variety than meat-lovers and there's so much choice!

My favorite vegetarian meals are:

Spinach and cheese cannelloni in napolitana sauce
creme of Broccoli and cauliflower soup
mushroom soup
stir fried tofu and vegetables in soy and oyster sauce
spinach quiche
zucchini frittata
chinese-style fried rice
pumpkin soup
cheese-filled ravioli in avocado and spinach cream sauce
