Hi wildlittledan, here in the Philippines, we have a soup called Sinigang. It's made with either pork, beef or fish. They are simmered in water flavored with sour tamarind. It's really yummy, especially eaten with rice. Vegetables like eggplant, taro, kangkong (morning glory), chili, etc.

I live in the United States and find that every region has different soups. Campbell's soups all have way to much salt even the healthiest ones. My favorite is homemade Chicken noodle soup or chicken and dumplings. Even that is made different in the different regions. I lived most of my life in the west and the chicken and dumplings were made with nice fluffy dumplings and when I moved to the south east I was disappointed to find that the dumplings made here were like very thick noodles. I like to take frozen chicken parts and slow simmer them until they are nice and tender seasoned with sage, thyme, rosemary, ginger and turmeric. This doesn't always give enough broth for a nice pot of soup so I will save the broth in the freezer until I have enough. Then I take the chicken from the bone and cut it into bite sizes. I add carrots, celery and some potatoes and just enough hot sauce to give the soup a bit of zing. I then make my noodles with eggs flour and a little water and some salt. Then take the stiff dough and roll it out and cut for noodle. for dumplings I also use the same as for the noodle but less flour and add some baking powder and it is not stiff but more like biscuits. This I put on the top of the soup and simmer until done about twenty minutes.
What kind of soup is popular in your country?
