improving an old favorette

Mac and cheese were on the agenda at our latest cooking club. We formed this club to experiment with older recipes and try to make them more in line with new nutritionally guide lines. Goal is no wheat, no meat,no milk, no white flour or sugar, no nuts or other allergy pruducing items. We figured mac and cheese would be the max in difficult transferemations. Bottom line is we were successful, kind of. Used tofu, rice mac, nondairy sour cream and nondairy chedder cheese, did use one egg. It's true we came up with an edible meal, but when compared to the old fashion one it just didn't compare. We ate it fresh and agreed that if served in a potluck setting it was acceptable, but when I took a sample of each home for Hubby's approval, he didn't, said it gagged him. Now he's not a picky eater so I think that fresh from the oven it's ok but when cooled and reheated not so much. I'm not putting this one in my cookbook.

Personally for me, this does not sound Good. This is one I would have to pass on. Just the thought of even considering trying this sounds grouse. There is no way I could pass on some of the ingredients you mentioned you are not wanting. Yes, these other things can give people allergies, but when it comes to Macaroni and Cheese give me the original homemade kind anyday.

Macaroni and cheese is a classic that is most definitely virtually impossible to improve upon. Most of what I've seen in variations of the basic theme of pasta and cheese include additions (more and more cheese, more variations of cheese and pasta, adding lobster, veggies, cream instead of milk, etc.) not subtractions of the basics. I must agree that the essence and original flavor of the dish cannot be improved upon by subtracting and replacing its rich and delicious ingredients. No Substitions!

I don't think I'd eat it either. I think you are right it may be one that's better hot and freshly from the oven. I've never eaten any of the things you listed outside of an egg. I couldn't imagine the taste of it and the expense.

You can make substitutes for a lot of things, but there is just no decent substitute for cheese...

Healthy food is not always tasty, but then you are on the right track. So, keep it up. Spicy sauce on the side is helpful to swallow mealy kind of food, because it brings out the saliva in one's mouth. Try that with the reheats.

Mac an cheese is a hard one to change. I stay away from that because I am diabetic and any pasta or bread is all carbs. I try to eat only non carb healthy foods. Believe me, these days it is hard to eat right. When we were children things were much more fresh. Noe everything is processed.

I can't imagine how anyone can improve or change mac 'n cheese. It's such a simple and delicious dish! I can't even conceive of that non-dairy sour cream would be like and I would probably have the same reaction as your hubby! Y'all need to find a way to make delicious, very low calorie cakes, pies, brownies and other goodies!!
